Life’s Too Short (Eat the Cookie)

Life is short. We never know what tomorrow will bring, and sometimes, it’s the little joys (like a cookie) that make today a little brighter.

If you’re on a weight loss journey, or even managing diabetes, it can feel like certain foods are “off-limits.” I’ve learned the hard way that when I tell myself I can’t have a cookie, my mind becomes completely fixated on it. I’ll obsess, bargain, and eventually, when I finally give in, I don’t just enjoy one cookie, I overindulge.

Here’s the truth I’ve come to embrace: giving yourself permission to enjoy a cookie every once in a while isn’t a failure.  It’s balance. It’s food freedom. It’s understanding that one cookie won’t derail your progress, just like one salad won’t make you instantly healthy.

For me, that cookie is more than just sugar, butter, and flour. It’s a reminder that this journey isn’t about deprivation, it’s about sustainability. It’s about finding a way to live with joy while also honoring my health.

So yes, if you want the cookie, eat the cookie. And savor every bite.

Ingredients

  • flour, baking powder, baking soda
  • sugar
  • brown sugar
  • butter
  • vanilla extract
  • eggs
  • no sugar added peanut butter chips
  • cinnamon Life cereal

Yield: 44 cookies
Prep Time: 10 minutes
Cook Time: 9 minutes
Total Time: 9 minutes

I love a thin and crispy cookie, Hannah loves a chewy cookie. We switched up the baking temp and times to get the best of both worlds.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup (2 sticks butter)
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 7 ounces no sugar added peanut butter chips
  • 2 cups Cinnamon Life cereal

Instructions

For Crispy Cookies:

Preheat oven to 375. Bake for 7 minutes.

For Chewy Cookies:

Preheat oven to 350. Bake for 9 minutes.

In a small bowl, mix the flour, baking powder, baking soda and salt. Set aside.

In a large bowl, combine the butter, sugar, brown sugar and vanilla extract. Whisk until creamy. Beat in the eggs.

Add the peanut butter chips and Life cereal and mix just until combined.

Add the flour mixture to the egg mixture, and mix until combined.

Using a small scoop, place 12 cookies on the baking sheet.

For cirspy cookies bake for 7 minutes; for chewy cookies bake for 9 minutes.

Let cool on the baking sheet for 3-4 minutes before cooling on a baking rack.

I chose not to figure out the Weight Watchers points 😂

When it comes to cookies, I’m all about the crispy edges and thin crunch, while Hannah is firmly on Team Chewy, much like our pizza preferences! The fun part is that with just a tweak in oven temperature and baking time, we were able to make both of us happy. My version came out perfectly crisp by baking at 375°F for 7 minutes, while Hannah’s cookies stayed soft and chewy after baking at 350°F for 9 minutes. One dough, two styles and everyone gets their favorite!

What does these cookies taste like?

I recently discovered Reese’s no sugar added peanut butter chips.  Life cereal was on sale recently and I picked up a box of cinnamon Life cereal.  I thought this would add a nice hint of cinnamon and a bit of crunch to the cookie and happily it worked out.  While Hannah didn’t want my crispy version, she ate two immediately, so that is a win.
