Lightened Up Paula Deen Cheddar Biscuits

My Mom and I recently went on a trip to Hilton Head to surprise my great Aunt for her 95th birthday!  On the way home from that trip, we spent 24 hours in Savannah, and after eating at Lady & Son, I had to make a lightened up Paula Deen Cheddar Biscuits recipe.  Be sure to follow along for more Weight Watchers recipes.

What is the difference between baking mix and biscuit mix?

The main difference between a baking mix and a biscuit mix lies in versatility and intended use. A baking mix is a more general-purpose blend that is typically made with flour, leavening agents (like baking powder or baking soda), salt, and sometimes fat.  It’s designed to be used for a variety of baked goods such as pancakes, waffles, muffins, and quick breads.

Biscuit mix, on the other hand, is specifically formulated for making biscuits and often contains a higher ratio of fat (like shortening or butter powder) to produce a tender, flaky texture. While you can use biscuit mix for other recipes in a pinch, its flavor and texture profile are optimized for biscuits, making baking mix the more flexible option overall.

Since I live in the Midwest, finding biscuit mix can be elusive, so I used a baking mix for this version.  But you can buy biscuit mix on Amazon (I already ordered it!), so stay tuned for that version coming soon!

Ingredients

  • cheddar cheese (use a good cheese – this is not the time to use fat free cheese)
  • biscuit mix (we used a baking mix)
  • milk (I used 1%, but use your milk of choice)
  • salt and pepper to taste (we used Paula Deen’s House Seasoning)
  • butter (I reduced the amount to just 2 tablespoons for brushing the biscuits out of the oven)
  • garlic powder
  • parsley (fresh)

Lightened Up Paula Deen Cheddar Biscuits

These are a lightened up version of Paula Deen's famous cheddar biscuits. While these aren't as decadent as hers, these are still very tasty! 8 WW points, 212 calories, 6 fat, 33 carbs, 1 fiber and 5 protein.

We lightened them up by reducing the amount of cheese and butter in the original recipe.

Ingredients

  • 1 cup shredded cheddar cheese
  • 4 cup biscuit mix***
  • 2 cups milk (I used 1%)
  • salt and pepper
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 375. Spray a baking sheet with avocado oil spray, or bake on parchment paper.
  2. To a large bowl, add the cheese. Add the biscuit mix and toss to coat the cheese. Slowly stir in the milk.
  3. Add salt and pepper to taste. Mix the batter until everything is combined. This is a shaggy dough.
  4. Using an ice cream scoop, drop onto the prepared baking sheet. Bake for 12-18 minutes depending on your oven. We baked ours 18 minutes.
  5. Mix the melted butter, garlic and parsley. Brush the hot biscuits with the butter mixture.

** her original recipe called for biscuit mix. Unfortunately, that is hard to find in the midwest, so I used Bisquick which is a baking mix.

I can’t wait to make this recipe again once I get the biscuit mix.  These biscuits as written remind me of the Red Lobster biscuits.
