Chia Pudding Parfait is one of my new favorite breakfasts, but I somehow forget about it. It could not be simpler to make – just remember this ratio – 3 tablespoons of chia seeds to 1 cup of liquid. It could be almond milk, soy milk, coconut milk – whatever you have. Simple stir in a mason jar, top with a lid and let it sit overnight. That’s it! I will mention that I prefer this 48 HOURS after I’ve made it for full plumpness of the chia seeds – every morning and night I will stir the pudding so that the chia seeds don’t settle on the bottom.
When I got to work I put it together – chia pudding/plain Chobani yogurt/sliced bananas – repeat layer and top with a tablespoon of trail mix or granola for some crunch. I use 1/2 a cup of the chia pudding for this parfait, making this 5 points – 2 points for the chia pudding, 1 point for the soy milk and 2 points for the trail mix. Trail mix, why do you have to cost so many points?!
This is light, yet super filling. I don’t mind the texture of the chia pudding at all – some people said they didn’t like getting chia seeds in their teeth, or couldn’t handle the texture. I do know the longer it sits, the bigger the chia seeds get – so many let it set up for 48 hours before eating?
I love how pretty this looks! And perfect for a rainy day – I got so soaked that even my underwear was wet – I used a smaller umbrella because I didn’t want to be one of those people who used a golf umbrella downtown, but F that – today I have my giant Certified Angus Beef umbrella and I love it!
I was so, so busy at work yesterday – so much so I never left to go to lunch and finally around 3:30 I heated up my lunch – more chicken meatballs (I may make a meatball pizza tonight!) and I served it over garlic balsamic green beans and a bit of feta cheese over the top. So delish. And my manicure is still on fleek! š
I also worked late, so didn’t get home until nearly 8:00 p.m. Luckily I had skinny pizza dough in the fridge – this is day 7 of this dough. Yum. This dough is 1 point per ounce, so I used 4 ounces for the crust, 1.25 ounces of Italian sausage (3) and one ounce of part skim mozzarella cheese (4). I need to do a Trader Joe’s run and stock up on the 1 point mozzarella cheese.
Ready for the oven – I also added sliced banana peppers.
If you haven’t figured it out over the last almost TEN years of blobbing, I kind of really like pizza. Like a lot.
And because I cooked it on my baking steel – perfection!
Another rainy day in Chicago today, but our weekend is supposed to be sunny and low 70s – perfection! I love your ideas and way with words and recipes! Thanks for sharing; I’m gonna try the chia pudding parfait. I have never made the pudding before. Looks very good! Also, meatballs, green beans and cheese looks great. The pizza is my favorite though and I need to try the two ingredient dough. Been procrastinating on everything. š³šš I do love pizza, especially with semi thin and crispy crust. Have a good weekend. š
Trudy, try my skinny pizza dough – much easier to work with than the regular 2 ingredient dough and it’s the same points – basically a point per ounce of dough – hope you have a great weekend too!

I haven’t tried Chia pudding yet. I am not a fan of sweets for breakfast but I do like pudding and jello of course all things must be gfree. I don’t eat pizza anymore since going gluten free either plus its a portion control thing with me too so I abstain. I shall live vicariously through you. Have a great weekend!

To be honest, no , I have not tried the Chia pudding. I am not a pudding or jello fan and I can’t get past the Chia pet thing. Look at this way, more Chia for everyone else š Your pizza on the other hand, I would be all up in that! Love the steak umbrella. Have a great Friday!
That umbrella is so big I didn’t use it because its kind of obnoxious, but the day before when I had a small umbrella and my underwear even got wet walking to work – I don’t care! But I always have a craving for beef when I use it š
