I didn’t really meal plan a full week and nothing I had appealed to me at all.  So I just said “fuck it” and decided to buy my food yesterday.

If you guys have a Freshii near you – get this huevos bowl.  I always ask for the salsa and spicy bbq sauce on the side.  I pick out the tomatoes from the salsa (and throw the gross red onions straight into the trash) and while the spicy bbq sauce is delicious, it doesn’t really tie into this bowl.  Best part?  $6.23 out the door.

Here is how I broke down the points.  It was delicious, hearty and kept me full for hours.  Which was good because I didn’t even leave for a short lunch until 1:45.  Busy day!

I have Jacky to thank for showing a picture on Instagram, because I didn’t even realize yesterday was the first week of the farmers market at the Daley Center – which is literally right across the street from my office.   I decided to go check it out and hopefully pick up my favorite mushrooms and my favorite thai food for lunch.

I got the mushrooms!  But not thai food – all the food stalls were sold out by the time I got there.  I went to the food court across the street, and M Burger had the shortest line, so that’s what I went with.  For some reason I had a taste for chicken tenders!  I counted 12 points for lunch.  #balance

When I worked farmers markets (I can’t believe that was two years ago already!) River Valley Ranch had a stand across from my stand.  I used to make them veggie burger wraps in exchange for their delicious mushrooms.  I split a $10 bag with one of the attorneys at my office, and brought home baby bellas and oyster mushrooms.  

That was the inspiration for my dinner last night, as well as this delicious corn on the cob. I bought six ears of corn last weekend not realizing Hannah and Jacob were going to go back on their Keto diet, and corn isn’t allowed there.  I may just cut the corn off the last four ears and freeze it for soup.

A quick peek in my pantry and I saw the quick cooking grits, and then it all came together in my head.  Farmers Market Cheesy Shrimp and Grits and a brown butter creole sauce.

I added one triangle of this cheese to my grits – 1/4 cup grits cooks to about a cup which is 4 points, and then another point for the Laughing Cow Cheese.

And I have my brother to thank for turning me onto this seasoning.  OMG, it needs to be a kitchen staple – so flavorful!   I had it at his house a few years ago and its so good.  

Sometimes I think of a dish and how it’s going to turn out and more times than not, it’s no where near my expectations.  But this one?  Better than expected!  The grits were creamy and cheesy, the shrimp was cooked perfectly and the mushrooms and corn just brought it all together.  At the very end I melted a teaspoon of ghee and added 1/2 teaspoon of the creole seasoning and drizzled that over the top.  That made the dish.
