Hannah is one of those people that is never sick. As a baby I can remember one night when she was about 2 1/2 that she puked 4 times in a night – twice in her crib and then twice when I brought her into my bed. Only problem was that I only had two sets of sheets for each bed and I think we ended up sleeping on blankets.
It’s easy to make them feel better when they are little. You pick them up and let them lay their head down, rock them back and forth, read them books. So imagine my surprise when Hannah called me at 1:00 in the afternoon to say she felt sick and had to leave school. Mind you, other than having the chicken pox when she was in kindergarten, Hannah has never missed a day of school.
When I got home from work, she napped, she cried because her stomach hurt, and when she tried to take Pepto Bismol, it made her puke. She didn’t quite make it all the way in the bathroom, and when she came out she said “don’t go in there – I puked everywhere.” But no matter if your baby is 9 months, 9 years or almost 19 like my baby, I did what a good mother should and cleaned it up. Then I told her she was probably faking it because it was garbage/recycling night and that’s one of her chores. 😀
So hopefully she feels better today!
I did my usual baked potato Sunday – I baked up 4 potatoes to use during the week. Love that they keep in the fridge for a week. Breakfast was my stuffed baked potato breakfast: 3.5 ounce potato, 1 ounce black beans, 1/4 cup diced red pepper, 1 egg 3/4 ounce of cheese (only 2 points!). Scrape out half of the potato leaving half of the shell. Scramble the potato with the black beans, red pepper and egg.
Then when I got to work I just put the egg scramble in the potato, topped it with 3/4 ounce cheese and put it in the toaster oven under broil. This is so filling.
I went to the gym at lunch. I ended up doing 35 minutes on the stairmaster and then a 15 minute 3.3 hill climb ride on the bike – nice and schweaty workout.
In the March FoodNetwork magazine, they had a pull out of 50 things to do with pesto. One of the first things to jump out at me was the pesto bean soup. Although I made modifications – I added a can of chick peas, and left out the onions. While this was delicious I think next time I made add some smoked sausage to this.
Pesto Bean Soup (printer friendly version here)
4 servings: 1 ½ cups per serving
6 WW PointsPlus (246 Calories, 5.1 fat, 36 carbs, 12 fiber and15 protein)
Ingredients:
- 1 tsp. olive oil
- 2 garlic cloves, minced
- Pinch of red pepper flakes
- 1 can cannellini beans
- 1 can of chick peas
- 4 cups chicken broth
- 2 stalks celery, chopped
- 2 carrots, peeled and chopped
- 1 roasted red pepper chopped
- 2 tablespoons prepared pesto
- Pinch of black pepper
- ½ tsp. salt
- 1 ounce shaved Parmesan cheese
Instructions:
1. Heat oil over medium heat in a stock pot. Saute garlic and red pepper flakes for a couple minutes. Add the drained beans, chicken stock, celery carrots and red pepper. Cook for 15 – 20 minutes or until the carrots are tender.
2. Remove from heat, stir in the pesto, salt and pepper to taste. Garnish with a few shaved pieces of Parmesan cheese.
My bowl with a 3 point slice of bread – lunch comes in at 9 points.
Dinner was pork chops with 1/2 cup blue cheese polenta,(except I halved the recipe and reduced the butter to 1 tablespoon) and a sauteed zucchini with fiesta seasoning – nice and spicy. I only ate half the pork chop, so that was about 5 ounces. Dinner comes in at 11 points.
Someone at my office brought in a chocolate Portillo’s cake. Anyone in the Chicagoland area knows that this is an amazing chocolate cake. It’s super chocolately and so moist. In fact, I’ve made a copy cat version – you use a box of cake mix, 1 cup water, 1 cup mayo, and 3 eggs – so not good for you, but you have to splurge every once in a while. 😀
Well, I brought a slice home for Tony, and wouldn’t you know we split it watching t.v. last night – totally worth the 5 points!

- 31 points, 47 flex remaining, 16 activity points earned
- 35 minutes stair climb, 3.3 mile hill bike ride
- average blood sugar 122

I was similar growing up in that I never got sick or missed school. Maybe the odd sniffle but never anything that kept me from attending class. I can imagine for her how scary too that would have been to now have a full on cold/flu! Really hope she’s feeling better, no fun not even having pepto work eek. “mommy to the rescue” hehe, she’s lucky to have you there for comfort!! .. and later when she feels better, she’ll have delicious soup to look forward too <3

My girl’s the opposite of yours. She can cough herself to a pukey mess at anytime. She even starts gagging at the sight of a piece of lint. NOT an exaggeration!

Loving that pesto soup idea! Sometimes if I have extra pesto, I have it as a spread on a turkey sandwich for lunch – just need a breakfast idea and I could eat it for all three meals, I love it that much!

Hey, wasn’t the latest issue of FoodNetwork among the best ever. I made the Cabanero sauce last night listed, with plans to do the garlic Month. And that Spaghetti cake.
Biz, I just want to say that you are really among the best Weight Watcher (the brand and system, not the generic) people I have ever encountered. That Egg dish, soup and dinner is exactly what they have in mind. I went through a year with them and watched so many people sub bland hideous food for their meals and then were disappointed with the lifestyle.

Your story of when she was a baby brought back memories…there were several nights I slept on the kitchen floor with a puking baby/toddler because cleaning up the kitchen floor is so much easier than carpeting! lol I feel really bad now when my daughter calls from college and is sick, because there is literally NOTHING I can do to make her feel better….you never stop worrying about your kids and being their mom…no matter how big they get.
What a great, great idea about the baked potatoes. I am going to pick some up to bake for the week for lunches at the store today!

We’ve had a wicked virus going around here.. it’s the one that made Mr. Helen lose 9 pounds in a few hours and made me disinfect my house from top to bottom 2 days before Christmas. I hope Hannah doesn’t have that!
Every single thing you ate yesterday looks yummy to me. I always used to make gorgonzola polenta until I tried Pioneer Woman’s creamy goatcheese polenta and now that’s our new favorite!

I love that baked potato, it looks awesome. I love potatoes and I know they aren’t that great for us but if made into a meal it has to be okay.
