That’s the sound of me slapping a ruler on my hand for not working out at lunch today, but I have a reason! My sister’s company, due to the economy, has laid off a bunch of people and my sister might have been next but was saved. So the emails/phone calls have come to a screeching halt. I think I’ve talked to her a total of five minutes all week!
So when she took her lunch break, she called me, so we ate our lunch together over the phone to catch up. I know I am going to be seeing her all day Sunday, but still! Tony can’t figure out what we possibly have to say when we called each other 20 times a day! It’s a twin thing, what can I say?
Lunch was so yummy. As I was putting my lunch together this morning I asked Tony if he wanted me to leave some. You can guess the answer was no!
Lunch:
- 8 ounces spaghetti squash
- 5 ounces marinara sauce
- 1 ounce mozzarella cheese
- .5 ounce sliced pepperoni
I just dumped the whole container in a skillet in our work kitchen to warm it up. The cheese got all melty and at the end I sprinkled it with crushed red pepper and Italian seasoning. It looks like dog food but the taste is amazing!
Lunch break is almost over, gotta run. Guess what’s for dinner? P I Z Z A !
Although I may give Tony a break and pick him up a steak! See you then!

I love spaghetti squash like that. That is so cool that you have a twin. I think that would be so much fun.
All I do is microwave it for 4 to 10 minutes, depending on how big it is. I tend to like it slightly “crunchy.” Let it cool completely, then cut in half and remove the seeds. Using a fork, you just scrape out the “spaghetti.”
There are sites that say you can slice it raw, and cook it face down in an inch of water for 45 minutes or so – but I had such a hard time trying to cut it – the flesh is really tough, I went the microwave method.
The dressing is just light Kraft – easy!
So… How does one prepare spaghetti squash? I’m not the best cook! ALso – do you make your own salad dressing? It looks really yummy!
