This week has seemed so long to me! But the school year has gone by really fast! Hannah only has three more days of school and a week from tomorrow she’ll be a graduate of the Class of 2010!
It’s so weird, when she was born I thought “it will be 2010 when she graduates from high school!” It seemed so far away, and can I tell you when I did the math and figured I’d be 42 when she graduated from high school, my then 24 year old self thought “God, I’ll be so old!” Well guess what? I still feel like 24! 😀
Breakfast was another round of a breakfast sammie on an everything bagel thin. Although the star of this breakfast sammie is this cheese:
I actually love all things goat cheese – and if I can find goat milk, I want to try to make my own goat cheese. Have you ever seen goat milk in your grocery store? Breakfast comes in at 442 calories, 48 carbs, 23 protein, 19 fat and 6.6 fiber.
I had a shrimp stir fry for lunch using the last of my yam noodles. Still not sure exactly what they are – all I know is that seven “bundles” of noodles is only 50 calories and 8 grams of fiber! The star of this dish is the stir fry sauce – I think I’ve mentioned it before but its worth mentioning again!
Lunch comes in at: 333 calories, 47 carbs, 27 protein, 6.3 fat and 19 fiber! 😀
This took me a long time to eat, but it wasn’t very filling at only 333 calories. I snacked on unphotographed almonds and a mini pack of peanut m&m’s! Snacks came in at: 236 calories, 15 carbs, 7.4 protein, 17.8 fat and3.9 fiber.
Last night’s dinner was grilled chuck roast. I know what you are thinking “you can’t grill a chuck roast – that is a cut of meat that needs to be cooked low and long to be tender!” I have Tony to thank for this dinner – the meat is medium rare and absolutely delicious!
I grilled zucchini on the side – the inside pieces are mine – with 1 tablespoon of crumbled tomato basil goat cheese 😀 I think I have a serious addiction to goat cheese!
My plate: 3 oz. meat, 1 cup mashed potatoes, 1/4 cup beef gravy and zucchini with goat cheese. Dinner comes in at: 462 calories, 41 carbs, 32 protein, 18.8 fat and 3.8 fiber.
I am hoping Tony is up for pizza party Friday! 😀 I am kind of thinking of making a different kind of pizza though – any ideas?
We have zero plans this weekend which I absolutely love! What are you doing this weekend?

- 1473 calories, 151 carbs, 89 protein, 62 fat and 33 fiber
- 45 minute walk with 2 pound weights 😀

I was actually looking at goat’s milk yesterday but decided not to be brave. Someday I’ll give it a go. Your age is just a number and I feel like I’m a teenager most of the time even thought the big bad 4-0 is on the horizon 🙂

You can get goat milk in pretty much all of the grocery stores around here 🙂 I’ve never tried it though, but I see quite a few people buying it at our store.

I love to make pizza on naan bread, I usually buy the supermarket brand of naan and top it as I would any other pizza….really yummy!

everything looks so good, except i think i need to try a different brand of goat cheese or something because i’m just not having luck with it, and i really want to like it!

Hmm…very interested to see the pizza dough recipe!
So simple! 2 cups flour, 1 teaspoon salt, 2 1/4 teaspoons yeast and 1 cup water. Mix and roll out – that’s it! 😀 This makes one 16 inch crust. Or two thin 12 inch crusts.

Yeayyy, Hannah! Me, I hope I feel 26 in another 12 years when my youngest is done. 26 was a really great age, although the 40s are turning out to be pretty fantastic.
Mmmm, pizza. What about a ratatouille pizza, with lots of grilled veggies on it? Or I liked the fajita pizza idea.

I got goat’s milk and goat’s milk yogurt from my farmer’s market a few weeks ago.

I made BBQ chicken pizza with red onions and BBQ sauce for the pizza sauce with slices of mazzarella cheese on it. It is now one of my favorite pizzas! Hubby absolutely loved it!
I have never actually had bbq chicken pizza before – for some reason hot bbq sauce seems gross in my head, but I can’t knock what I haven’t tried! Of course, we’d leave out the onions!
2010 is a cool year to graduate! At least I think so! How exciting for you guys! My graduation was almost ten years ago and I still remember like it was yesterday oddly enough.

Congratulations on your daughter’s upcoming graduation. I smiled at reading your mental math of how old you’d be when she graduated, etc…and thinking you’d be SO OLD at 42, yet now feel like 24. That’s beautiful, and clearly a major by product of healthful living.
