I was back to the good ole egg/cheese/ham sammie for breakfast yesterday – except this time my cheese of choice was pepper jack. My store had it on sale for $1.99 a pound!! So spicy and good 😀
Does anyone subscribe to Bon Appetit? I am actually really starting to like this magazine. In the front they have people write in asking for recipes they’ve had at restaurants or bed and breakfast places. This months issue included a roasted red pepper soup, which I absolutely love. I adapted it though, because I didn’t do the anchovy topping, and I used more vegetable broth.
I also used canned diced tomatoes – since I knew I would be using my stick blender to puree the soup, I left the red pepper in pretty big chunks.
After I added the vegetable broth and let it cook down some, I tasted it and it was . . .boring! So I added a tablespoon of this:
And it was perfect! Best part – this makes six 2 cup servings for only 145 calories, 12 fat, 5.8 carbs, 1.5 fiber for two cups!
Red Pepper Soup (adapted from Bon Appetit)
3
red peppers, chopped
14
ounce tomatoes, diced
32
ounces vegetable broth
1/4
cup extra virgin olive oil
1/4
cup hazelnuts
1
teaspoon crushed red pepper
Directions
Put everything in a pot, let simmer for 30 minutes. Using a stick blender, blend until smooth. Makes six 2 cup servings. Biz Note: I could have reduced the olive oil to 1/8 cup and easily left out the hazelnuts – you really couldn’t taste them. Still, I think 145 calories for 2 cups of soup isn’t bad!
I had a ham and pepper jack cheese sammie in a low carb wrap on the side:
With a generous amount of this mustard – OMG, so good! The apple part of this mustard is actually apple cider vinegar – so the punch of the vinegar with the spiciness of the ginger was an amazing combination. Oh how I love mustard! Thanks again Karena for the mustards!!
My afternoon snack was a handful of almonds. I am slowly getting used to them not being roasted or salted!
Dinner was so quick to put together. I made my Cincinnati chili – its literally ready in 20 minutes!
While I normally make chili three ways over pasta with cheddar cheese, we had veal hot dogs that needed to be eaten. These are from our deli and THEY ARE HUGE! (that’s what she said!)
I weighed mine, and it was six ounces, so I cut mine in half. My bun is 2 ounces, I had 2 ounces of chili, 3 ounce hot dog, 1 ounce cheddar cheese, 2 ounces of kidney beans and an ounce of potato chips on the side.
Stats for Monday:
Exercise: 30 minutes elliptical, 15 minutes upper body strength train, 5 minutes abs on the ball.
Time to jump in the shower – I can’t wait for lunch – Thai basil wraps in baked wontons and a vegetarian pho soup! Marissa, I think you’ll like it – I’ll post the recipe tomorrow.
Oh, and I ran across another food porn site! It’s called www.refrigeratorsoup.com – you can submit pictures much like Tastespotting and Foodgawker! I am still waiting for Healthy Yum to come back – maybe by next week?
I LOVE SkyLine chili (Cincinnati Chili). Your final product looks fabulous, much better than they make it look at the store! I really wish Nick liked it as much as I do, because I would make it in BIG batches! I mean, it just tastes amazing!
I don’t subsrcribe to Bon Apetit but I hear it’s really a keeper. I have looked through the magazine quite a few times, and I always see recipes that I think sound really fantastic. This roasted red pepper soup sounds divine. Again, I wish Nick liked soup!! I like to make the one-serving soups because if I made more it never gets’ eaten. I can only eat soup maybe once or twice a week, and Nick refuses to eat it because he’s crazy. Thanks for the recipe!
Looks amazing as usual biz!! OMG i cannot believe we were so close to u this weekend!? My cuz lives in Evanston, so you must be neighbors 😀 Next time u will definitely come…i can’t wait to come back in nicer weather!

Wow, I think you will be a great OB. It seems like you have a real love for children, famliies, and people in general. Sad to say that those qualities are rare traits in todays world. I believe not just anyone should be in just any job because you could be in a job that you hate and end up making everyone who comes in contact with you at work miserable. You have the joy and care to be great at your job and effect those you will be working around not only by your knowledge , but by your love for what you do.
Wow yummm I love all of your meals! Breakfast egg, ham and cheese is so delicious. And then your soup and sandwich! Amazing. I’m going out and getting some ham.
I hope you have a wonderful night!

Good squeeze, but great!
I didn’t order Bon Appetite when I was doing magazines because I’d heard they were going under! Wonder if they worked things out or…?
The red pepper soup sounds wonderful & I’m all over 2 cups of soup for 145 calories. The next time red peppers are on sale I’m snagging a bunch for this. I have a ton right now but am planning to make cajun stuffed peppers with them….oh, now I’m torn. LOL
I made pepper soup for the first time the beginning of January. We had a TON of peppers left over from the Christmas veggie platter. To get more flavor I roasted them first and then threw them in the pot. You should try that next time!
Good – I should dfiinetely pronounce, impressed with your site. I had no trouble navigating through all tabs as well as related information ended up being truly easy to do to access. I recently found what I hoped for before you know it at all. Reasonably unusual. Is likely to appreciate it for those who add forums or anything, site theme . a tones way for your customer to communicate. Excellent task.
Mitzi I can answer this besauce my family lives down there! You are outside of my color planting schedule by about a month. The trick is, Las Vegas gets so hot in the summer, but you can grow almost all winter long. My book is really for a spring-summer-fall planting schedule. The dates I offer might work for you and others who live in warmer climates, but really have a spring-summer and a fall-winter season. I am very aware of your needs, and it’s on my list of things to research and write about. But honestly, I can’t speak from experience, only from my research. I encourage you to contact your local extension service (www.extension.org) for a recommended planting schedule.
I sure wish I could find the bargains you do! I’m a great shopper, I guess we just don’t have the same kind of sales as I’d be lucky to find that cheese at $5.99 a lb. on sale! Great job on those carbs too – you’ll figure out the fat thing in no time I’m sure.
I’ve seriously been obesessed with red bell peppers lately–they’re so delicious and probably a great addition to your soup!
Mmm that mustard sounds great too. I love mustard so I’m all about the different flavors and spices.
I can’t help but think of my mom when I see Bon Apetit. She has been a longtime subscriber AND she saves many of the issues! When my parents were fixing up their house for sale last year, I helped them clean stuff out. My mom had back issues of Bon Apetit from the 1970’s!!!!!
Yum! I love pepperjack cheese, mustard and hot dogs…all were featured in your post! I’m not a huge fan of red peppers, but you made this soup look so good, I would definitely give it a try:)
I hate when I get home and find out produce is rotten. I take so much time picking out the perfect one in the store only to cut it open and find it all gushy and weird inside. Good thing you thought ahead to buy extra!
I love anything with red peppers. I got this great recipe from Food network (Tyler) for meatloaf (which my family hates meatloaf but LOVES this one) with a red pepper relish. It rocks!
ooh, I forgot I have that mustard at home! 🙂
I LOVE SkyLine chili (Cincinnati Chili). Your final product looks fabulous, much better than they make it look at the store! I really wish Nick liked it as much as I do, because I would make it in BIG batches! I mean, it just tastes amazing!

I will – definitely missed the smokey flavor of roasting them . . . I can’t wait to grill! 😀
I like how you said “That’s what she said!” ha!
I never would have thought to put hazelnuts in soup, that’s kind of weird. It looks awesome though!
That chili dog looks great! Regretting my boring chicken and brown rice w/vegetable planned dinner for tonight!
This article went ahead and made my day.
I never would have thought to make red pepper soup. I bet just like tomato, this would pair well with a fancy grilled cheese.
Absolutely! 😀
Great looking soup. I will be trying it soon. Love red peppers every which way!
The soup looks delicious and healthy too! Great combination of ingredients and I will have to try it! Thank you!
That soup looks amazing!

I love red pepper soup! I’ve only ever had Trader Joe’s, but I’d love to try and make my own.
I hate when I get home and find out produce is rotten. I take so much time picking out the perfect one in the store only to cut it open and find it all gushy and weird inside. Good thing you thought ahead to buy extra!
