Morning! I had a great first day back on track! My goals yesterday?
- exercise at least 45 minutes – 40 minute The Firm DVD and 10 minute jog = 50 minutes!
- drink 80 ounces of water – easy – I drank two 32 ounce waters during the day, and 40 ounces at home last night
- no wine with dinner – wow, no wine AT ALL last night!
I have gotten in such a habit drinking wine. Pouring a glass while making dinner, probably another during dinner then after dinner maybe having another. While I love wine, they are empty calories, and my hope is that I can incorporate it when appropriate and not make it a daily routine. But I have to tell you, a couple times as I was watching t.v. I was like, “just have one glass, that would be fine!” But I knew one would lead to two – mind over matter baby!
Breakfast yesterday was extremely filling – 18 grams of fiber! 1 low carb tortilla, 1/2 ounce reduced fat cheddar, 1/2 cup canned black beans, 1/2 cup egg beaters, 1/4 avocado (which I made into a spread) and 1/4 of a medium canteloupe.
While I was making my lunch the night before last, Tony came into the kitchen, took one look at it and said “what the hell is that and I am not eating that!” I decided to make my spaghetti squash/quinoa casserole, but decided to add 1/2 cup of pasta sauce to the mix. So while it kind of looks like ass, the flavor was delicious!
It was freezing in our office yesterday, so one of my 32 ounce drinks was actually 32 ounces of hot tea! I found a new favorite:
I made my Thai Basil Chicken for my lunch today last night, and since I had half a package of chicken breasts leftover, it was an easy decision to make Chicken Parmesan!
My secret is that you have to a pretty hot pan and use butter while pan frying, but just 1 tsp. and the rest is Pam. It just gives a nice crunch to the panko bread crumbs and Parmesan cheese.
My plate: 6 ounces cooked pasta, 4 ounce Parm chicken, 1 ounce reduced fat mozzarella cheese, and 1 cup wilted spinach (I just put it in the hot pasta sauce after I drained the pasta – just takes about 30 seconds – so good!)
Stats for Monday:
- 1,461 calories,
- 50 fat
- 162 carbs
- 103 protein
- 32 grams of fiber 😀
- 50 minutes of exercise
- no wine! 😀
Goals for Tuesday:
- 45 minutes exercise
- 80 ounces of water
- If we get tickets to Joe’s theater to see The Blind Side, 2 drink maximum
Have a great Tuesday! 😀
Oh that breakfast looks so good! I never thought to add eggs and black beans together. Sounds and looks soooo good.
I swear Kev and I have to get to Joe’s theater. That would be a blast.
Your chicken parm looks fantabulous! I’ve never measured noodles cooked, only dry!
That thai basil chicken looks good too!!
Your breakfast looks incredible! I always laugh when I make a meal that tastes incredible but doesn’t look so. Whateves- taste is all that matters 😉 Good luck with the wine. My mama has the same issue !
I seriously want to eat at YOUR house! Mmm!
Great job yesterday! 🙂
All your food looks amazing, like always! 🙂 I so hear you regarding the wine. I didn’t really splurge too much over the holidays, but I totally treated myself to wine almost every day. It’s become a habit… It’s time to let go of it…
Your breakfast does look absolutely delicious! So creative too. I love all those ingredients but have never thought to combine them in such a way.
Sorry to hear about your diabetes but you look fabulous in any case!
Your breakfast looks awesome!! Love that combo!! I love The Firm! Which one did you do? I think mine is called Ultimate Fat Burner with Alison.
That’s exactly it!! I actually bought it on eBay because my friend had a bootleg copy and it kept skipping – when we finally got the whole DVD we were like “this is hard!” 😀
I totally hear you on the wine thing. I have a least a glass a night, but am steering clear this week. Is it true that it slows down your metabolism?
I have no idea Devon – worth looking into though! 😀
Yep, one glass of wine is key. Anymore is too much on a daily business and that’s coming from someone in the wine business. I find when you start to cut things out completely you end up binging, so do, do one glass.
Happy Tuesday! I am also trying to stay away from drinking most nights. It seems like every time we go out to eat (which is often) I feel obligated to order an alcoholic beverage – I am doing good going without so far 🙂
Have fun tonight if you go to the movies!
Nice work, achieving your goals yesterday! Glad you made it through your night without the wine – it’s a habit…at that’s what I keep telling myself with regard to certain things, like Dove Promises (what IS it about those things?!?).
Adding fresh spinach to your spaghetti at the last minute is a great idea – will have to remember that! The chicken parm looks sooooo good!
Enjoy the movies tonight!
Wow what a detailed catalog you keep! That is really really respectable I wish I could keep track of everything that thouroughly!!
I was wondering what you felt about the mediterannean style diet of one glass of wine a day and lots of olive oil? They do tend to be the longest lived people in the world right!
I am on a bit of a nutrition kick myself as I am a marathon runner and training up after all the holiday food-festing! I have actually just gotten into a new nutrition program designed by a doctor who won the Nobel Prize in nutrition and biochemistry for his work on the program, it’s been pretty amazing. It focuses on cellular nutrition as opposed to normal nutrition plans which is where the differentiator seems to be; I am on their weight gain/maintenance program to build muscle mass, but I know tons of people on their weight loss program that have lost 100+ pounds and kept it off for some 9+ years, crazy right?
I was wondering if, given the popularity of your blog, you might give your opinion on cellular nutrition plans vs. organic nutrition plans vs. standard cutting back on calories? As well as their effectiveness?

I look forward to hearing your take on everything!!
Wishing you a happy and healthy new years!!!
i love that you write out all of your goals! its a great way to stay attainable to all of them!
breakfast burrito looks PHENOM!
Wow, we are going to the hoity-toity theater tonight and you won’t be drinking??
This should be interesting!
Two drink maximum = two drinks in my book! Looking forward to our date night Tony! 😀
I love you!
I read this book series – I think the Red Hat Club? Some ladies club.. but anyways they had a set of rules and one of them was “no liquid calories” hehe that reminds me of your wine!
That breakfast looks SOOO good! I love breakfast burritos, it’s such a great flavor paired w/ eggs and to start the day.
I hear you on the wine!! I love a glass or two while making/eating dinner. I’m trying to lay off the booze in 2010 as well :O).

I ALMOST made chicken parm last night, that would have been funny! Twin powers activate!
I am loving the savory breakfast too! Yours looks awesome!
I LOVE panko! It is so much better than regular bread crumbs.
Great job on hitting all your goals for the day! that bfast looks pretty interesting but pretty good at the same time lol
it was freezing in our office” reminded me of a weight watcher meeting, and a question that generated a LOT of response…
Does shivering count as an activity point???
In my book it does! 😀
That breakfast look good, except the advacado, I’m alergic. I know I’m so weird!! Your Husband cracks me up!!
I LOVE that breakfast – it looks amazing!
“So while it kind of looks like ass, the flavor was delicious!” I’m a firm believer that, when it comes to blogs, things that look like ass are usually the best meals of the day!
everytime I see your breakfasts, I want eggs!
It kinda looks like ass had me rolling on the floor. I was reading and came to that comment and about died. So funny!
I’m 2 days in on the no wine. It really is just a habit that eventually leads to extra calories and a sluggish metabolism.
Mango tea is one of my faves, I’m going to have to look for that one. I’m struggling with water intake but I’m thinking some of it might be the unusually cold weather we’re having. I actually don’t want to drink anything but hot chocolate – ha!
Keep up the good work and I’d bet your holiday gain will be gone in no time.
yummmmmmmm.. i always love seeing your dinners and lunches biz! you are super creative!
nice job on the wine drinking! it is true, those are just empty calories… a friend of mine lost ten pounds over the course of a summer, just by cutting down or some nights completely out of drinking. now she swears by it.. plus her wallet is a little fuller .. lol
