Simple Chicken and Waffles

This simple chicken and waffles recipe is so quick and easy.  You don’t need any skills in the kitchen to make this.  This recipe is 16 Weight Watchers points, but 453 calories for the plate.

I’d never spend 16 points on breakfast!

Spending 16 points on chicken and waffles might raise some eyebrows, especially when I only get 23 points a day, but hear me out. One of the biggest reasons I’ve been able to maintain my 35-pound weight loss is by continuing to eat the foods I truly love, like this indulgent-yet-worth-it breakfast. Rather than feeling deprived, I plan the rest of my day around it using mostly zero-point foods. For lunch, I might have a tofu stir fry with ½ cup of rice for just 4 points. Dinner could be a 4-ounce steak with green beans and a baked potato topped with light butter, just 2 points. Add in my morning cup of coffee with creamer (2 points), and my total for the day comes to 24 points. That’s just one point over my target, and I can dip into my weekly points if needed. It’s all about balance, not restriction.

Ingredients Needed:

  • Bare chicken nuggets (or your favorite frozen chicken nugget)
  • Hungry Jack pancake/waffle mix (or your favorite mix)
  • water
  • avocado oil spray
  • pancake syrup – my favorite is Mrs. Butterworth’s sugar free

Simple Chicken and Waffles

Yield: 1 serving (3 waffles)
Prep Time: 5 minutes
Cook Time: 8 minutes
Total Time: 8 minutes

This simple chicken and waffle recipe is delicious and great for meal prep!

Ingredients

  • 3 ounces Bare chicken nuggets, defrosted and chopped
  • 1/2 cup Hungry Jack pancake/waffle mix
  • 6 tablespoons water
  • Avocado oil spray
  • 1/4 cup pancake syrup (sugar-free if preferred)

Instructions

    Preheat your mini waffle maker and lightly spray it with avocado oil spray.

    Add 1/3 of the chopped chicken to the waffle maker. Close the lid and cook for 2–3 minutes.

    While the chicken cooks, mix the waffle batter by combining the pancake mix with the water in a small bowl until smooth.

    After 2–3 minutes, pour 1/3 of the batter over the chicken already in the waffle maker. Close the lid again and cook for another 3–4 minutes, or until the waffle is golden and cooked through.

    Repeat the process with the remaining chicken and waffle batter to make a total of 3 mini chicken and waffles.

    Serve hot with your favorite pancake syrup—sugar-free works great for a lighter option!
