I was a Premier Protein Ambassador back in 2016. It was and still is the only protein shake that doesn’t make me shit my pants when I drink it. You’re welcome. I don’t work with them anymore, but if you google “my bizzy kitchen premier protein” you’ll find all the recipes I made for them.
One of my favorites though, was making pancakes using their protein shake.
The secret to these high protein pancakes is making a mock buttermilk out of the Premier Protein. You add a tablespoon of vinegar to the 11 ounce container and let it sit for 5 minutes. It literally looks like someone threw up in a jar after you are done, but it will taste delicious – promise!
I got all those pancakes with only 1 cup of self-rising flour. Each pancake is 1 smart point – 1 are 3 points and 3 are 4 points. Thanks Weight Watcher math! Since I used a caramel flavor shake, I decided to saute some apples to make caramel apple pancakes. Yum.!

It was April 1 yesterday, but Mother Nature still thinks its winter. My sister and I still got our walking shoes on, and headed over to Millenium Park. It will be nicer when it’s about 40 degrees and no wind.

By the time I got back to my office, my blood sugar was 55 and dropping, so no pretty plating for my taco bowl. I undercooked my chicken at home, so cooking it 1 minute in the microwave finished the cooking process and my chicken was nice and juicy.
Remember when meal prepping protein for the week, always undercook it the first time – no one wants chicken that tastes like ass. My lunch was only 4 points – 1/2 cup of rice (3) 1 point for the cheese and my dressing is my tomatillo salsa mixed with Greek yogurt. So good.
Before I knew it was time to meet up with my new Instagram friend Sarah. She’s been following me for about six months and we were supposed to have lunch last Friday but when I had the day unexpectedly off, we moved it to happy hour last night.
Not mad about that at all, so I suggested Fisk & Co. It’s was my third time there and it never disappoints. We split the mussels in lobster broth. Swoon. We got cheap happy hour wine. We talked like we were old friends, even though I am probably old enough to be her Mom. A young Mom, but still a Mom.
We look forward to hanging out this summer on the Riverwalk after work.

And when we were presented with complimentary dessert, how could we say no? I mean, the mussels were zero points – right?!
We walked back to the train – well, I walked back to the train. When we parted ways Sarah was going to be home in about 3 minutes. Me? About 90. At that time, there are no express trains. Totally worth it though.

Hi Momma! You can use regular flour, and not have to adjust the baking powder – I just happen to keep self-rising flour in my pantry.
