English Muffins

Skinny pizza dough . . . English muffins!  I wish I could take credit for this, but my fellow foodie Sherri at The Kitchen Prescription made them and told me about it.  It’s so weird how versatile this skinny pizza dough is!

It’s perfect with a bit of light butter and jelly.

Or an amazeball 4 point breakfast sandwich.   Let me know if you make these!  It’s perfect to make one at a time as needed – I haven’t made a big batch yet to store, but I think I would store them in the freezer and go straight from the freezer to the toaster.  I’ll keep you posted.

English Muffins

Yield: 4 English Muffins - 1 per serving
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Skinny pizza dough does it again! This time making English Muffins! The points of your muffins will vary with the amount of dough you use, but 4 ounces is the perfect amount in my opinion.

Ingredients

  • 16 ounces skinny pizza dough (link below in notes section)
  • 4 teaspoons grits or cornmeal

Instructions

  1. Prepare the Dough:Divide the skinny pizza dough into 4 equal pieces. Roll each piece into a smooth ball and flatten slightly into discs about 1 inch thick.
  2. Prepare the Pan:Sprinkle 2 teaspoons of grits or cornmeal evenly across the surface of a large, dry skillet with a lid. This helps prevent sticking and adds texture.
  3. Cook the Muffins (Side 1):Place the dough discs in the skillet, leaving enough space between each for expansion. Cover the skillet with a lid and cook over medium-low heat for 10 minutes, allowing the bottoms to become golden brown.
  4. Flip and Cook (Side 2):Sprinkle the remaining 2 teaspoons of grits or cornmeal around the skillet, then gently flip each muffin. Cover again and cook for another 10 minutes, ensuring the centers cook through.
  5. Cool Slightly:Remove the muffins from the skillet and let them cool for about 5 minutes on a wire rack.
  6. Fork Split:Use a fork to gently poke around the sides of each muffin, then pull apart to create the signature nooks and crannies. Avoid using a knife to preserve the texture.

Notes

  • Use them as the base for breakfast sandwiches with eggs, cheese, and bacon or sausage.
  • Toast and enjoy with butter and jam or peanut butter.
  • Serve alongside your favorite soups for a cozy meal.
  • Tip: These muffins can be stored in an airtight container at room temperature for up to 2 days or frozen for longer storage. Toast to reheat. Enjoy!

    ORIGINAL POST FROM 2019 BELOW:

    I met my Mom for lunch yesterday.  I hadn’t seen her since December 29!  I was going to see her before her trip to Hong Kong and Thailand, but I had bronchitis and didn’t want to get her sick.  Hannah was home yesterday morning so she was my stylist – thanks Hannah!

    We went to Uncle Julio’s in Schaumburg and loved everything.  Such good food – I got the seared ahi tuna tacos and my Mom got the salmon – I am trying to love salmon – I like it, but hers was delicious.  I guess I am just a bit intimidated cooking it at home.  

    My friends Mary Beth and Josh invited me over for the Superbowl last night.  They have four beautiful children under the age of 7.  They knew there were not able to have their own kids and my friend MaryBeth is starting to open up about how her family came to be – if you are on Instagram, give my friend Mary Beth a follow – she’s an amazing writer, mother and wife, and I am happy to call her my friend.

    How was your weekend?  I was busy so I didn’t meal plan as much as I usually do, but I’ll do that tonight – I know I have plenty of food – I plan on making a batch of chili tonight for the week.  It’s all good.
