English Muffins
Skinny pizza dough . . . English muffins! I wish I could take credit for this, but my fellow foodie Sherri at The Kitchen Prescription made them and told me about it. It’s so weird how versatile this skinny pizza dough is!
UPDATE: This post originally posted in 2019. The photos (taken January 2024) below the recipe card are new photography, and turns out my nails look nicer – ha!
It’s perfect with a bit of light butter and jelly.
Or an amazeball 4 point breakfast sandwich. Let me know if you make these! It’s perfect to make one at a time as needed – I haven’t made a big batch yet to store, but I think I would store them in the freezer and go straight from the freezer to the toaster. I’ll keep you posted.

English Muffins
Skinny pizza dough does it again! This time making English Muffins! The points of your muffins will vary with the amount of dough you use, but 4 ounces is the perfect amount in my opinion.
Ingredients
- 16 ounces skinny pizza dough (link below in notes section)
- 4 teaspoons grits or cornmeal
Instructions
- Prepare the Dough:Divide the skinny pizza dough into 4 equal pieces. Roll each piece into a smooth ball and flatten slightly into discs about 1 inch thick.
- Prepare the Pan:Sprinkle 2 teaspoons of grits or cornmeal evenly across the surface of a large, dry skillet with a lid. This helps prevent sticking and adds texture.
- Cook the Muffins (Side 1):Place the dough discs in the skillet, leaving enough space between each for expansion. Cover the skillet with a lid and cook over medium-low heat for 10 minutes, allowing the bottoms to become golden brown.
- Flip and Cook (Side 2):Sprinkle the remaining 2 teaspoons of grits or cornmeal around the skillet, then gently flip each muffin. Cover again and cook for another 10 minutes, ensuring the centers cook through.
- Cool Slightly:Remove the muffins from the skillet and let them cool for about 5 minutes on a wire rack.
- Fork Split:Use a fork to gently poke around the sides of each muffin, then pull apart to create the signature nooks and crannies. Avoid using a knife to preserve the texture.
Notes
Tip: These muffins can be stored in an airtight container at room temperature for up to 2 days or frozen for longer storage. Toast to reheat. Enjoy!
These are 4 WW points each.

ORIGINAL POST FROM 2019 BELOW:
I met my Mom for lunch yesterday. I hadn’t seen her since December 29! I was going to see her before her trip to Hong Kong and Thailand, but I had bronchitis and didn’t want to get her sick. Hannah was home yesterday morning so she was my stylist – thanks Hannah!
We went to Uncle Julio’s in Schaumburg and loved everything. Such good food – I got the seared ahi tuna tacos and my Mom got the salmon – I am trying to love salmon – I like it, but hers was delicious. I guess I am just a bit intimidated cooking it at home.
My friends Mary Beth and Josh invited me over for the Superbowl last night. They have four beautiful children under the age of 7. They knew there were not able to have their own kids and my friend MaryBeth is starting to open up about how her family came to be – if you are on Instagram, give my friend Mary Beth a follow – she’s an amazing writer, mother and wife, and I am happy to call her my friend.
How was your weekend? I was busy so I didn’t meal plan as much as I usually do, but I’ll do that tonight – I know I have plenty of food – I plan on making a batch of chili tonight for the week. It’s all good.
Be sure to come back tomorrow . . . it’s giveaway time! And it’s a good one.
Happy Monday friends – make it a great day!

Hey there! I just started WW and I stumbled upon your page and I love it! You always brighten my day. I freaking love your spirit!!! Anywho I want to make that amazing breakfast Sammy for 4 points. What does it have on it? I’m still figuring stuff out WW wise. Peace Mel
Hey Mel!
The dough is 3 ounces to make the English muffin – you could do egg whites for the filling which is zero points and a slice of turkey bacon for 1 point. You can also use fat free feta cheese for zero points, making it a 4 point breakfast sammie. 😀
I follow you on IG and have tired several of your recipes …. God I love your humor. You’re such a delight to my day ….. thank you.
Quick question, do you offer a hard copy version of your book?
Thanks
Marina from California
Hey Marina! I sold out of the spiral bound copies – I only had 300 and sold out in a minute. People have been downloading the eBook and then sending to their local printer to print and bind for about $5.

How great, a low point English muffin. Who knew? I loved your outfit way to go Hannah on the styling. You have so many amazing friends, what a great intentional family. Hope to see some photos from your Mom’s trip.
Back on WW and back to stalking all of your recipes. THANK YOU for being so consistent, and so positive!!! You make the healthy eating look so easier – or at least, easier, than the way I have been doing things. Excited to try the skinny pizza dough this week. Will let you know how it turns out!
You and your Mom are just beautiful, Biz 😀 It was in the 60’s in my neck of the woods so I enjoyed some time outside yesterday. Crazy weather! Hope your Monday is great!
