Chia pudding has quickly become my new favorite summer breakfast. The pudding is cold, you can mix it up adding any type of fruit you want. Here is how I make mine:
- 1 cup unsweetened almond milk (sometimes vanilla almond milk too) but any milk will work
- 3 tablespoons chia seeds
- mix – that’s it!
I will tell you that I tend to like it best after it’s been in the fridge for a couple of days. Yesterday’s pudding was made on Saturday. I then occasionally stir the seeds so they don’t settle to the bottom. The longer the seeds sit, the thicker the pudding gets.
Yesterday’s bowl was 4 points.
My sister had a work deadline so didn’t get a change to walk with me. My blood sugar was only 128 before walking, so I only walked for 30 minutes. I passed by this restaurant that had the most gorgeous flower baskets – I wish I could keep flowers alive – I’ll just admire the ones that I see. 😀
Jennie-0 Turkey sent me a big hunk of turkey – a flavor that I had never seen before – Sweet Thai Chili.
I made an epic picky plate – I called it epic because I loved everything on this plate – I made an open-faced sandwich with the turkey (6) and the rest was free – salsa verde for dipping with the veggies, and the fruit was so sweet. This literally took me about 3 hours to eat – which is why I call it a picky plate – I keep picking at it until it’s gone.
When my friend Nick said he wanted to get together after work one day, my first inclination was to say no – I mean, it’s a school night after all – ha! But I know I have to say yes to more social situations, so I jumped at the chance. He’s starting a vinegar business and gave me a bottle to try out. We used to go to Shamrock’s after work at The Chopping Block – so it was only fitting we go there.
It’s your typical neighborhood Chicago bar. No frills. Just cold beer and bar food.
They had Stella on tap, and I had two for 10 points. We had such a fun time catching up. He and his wife are just about to have their first baby, and he’s freaking out. He needed social media advice (which I had to laugh that a 30 year old was asking ME for social media advice), and I gave him some tips about how to do Instagram stories, etc.
He makes vinegar out of the waste from the Right Bee Cider brewery. He explained it to me, but I don’t understand it, but he hopes to sell to Chicago area restaurants. He also sharpens knives as part of his job, and brought me this selection of kitchen knives – so nice! I used that paring knife this morning and I can already tell that’s going to be one of my favorite knives.
I missed my 7:30 train by a minute, and had to wait for the next one. I didn’t mind. It was still light out, so I walked for a while, then stopped at McDonald’s and asked for two ala cart chicken tenders. She kept trying to talk me into the meal – it comes with large fries and a drink. Duh – I know that – but I knew I would also eat every single fry if I got that.
Guess who much two chicken tenders cost me ala cart? $4.50! The meal would have been $6.25. The Weight Watchers app said those two pieces were 12 points.
I ended my day with 31 points, and still have 15 weekly points until Friday. I do feel a bit bloaty this morning – maybe from the sodium? Or quite possibly the beer – ha! I’ll try to get 80 ounces of water in today – I’ve been slacking on the water.
I got home at 9:45. My car was in the far lot and the lone vehicle. I like how this picture turned out.

It is pathetic but I spend all my time with my husband. Working full time takes so much of my day that I just want to spend my free time with him. My sister tells me how wrong that is, but I am 55 & I know I am in the last 1/3 of my life & it is important to spend my time left doing what I want with who I want.
Is there a certain brand of chia seeds I should look for? I’ve never bought/looked at them before.
Thursday’s are my eat out day. Of course I do it more than just that but try to keep it minimal. I have declined social events, especially if I feel I’ve been on plan and doing well – or if it’s a place I just can’t find or figure out points for, drives me crazy when there’s no nutritional information on websites or if it’s not in the app 😬
I can imagine with your schedule – the boys are so busy! And I know it won’t get easier when they go back to school. If I lived closer I’d come over and put your food together 😀

Beer and the sodium would make me bloated. I don’t drink beer anymore because I was so bloated last time I had it.
Hm…I am about 50/50 for social situations. To be honest, with 2 kids, summer camp schedules, a full time job (both of our jobs are insane right now), I just wanna fucking sit at home sometimes. But I force myself to go out occasionally, and am glad when I do.
I get a lot of regular social interactions with workouts – my running group (paid training) meets 3x a week. I meet my friend at the gym on Sundays. When school starts up again I’ll do once/ week walk with another friend on my lunch break.
I usually try to bow out of social situations. I really don’t know why. I guess I like my comfort zone. I don’t really like that I’m like this. I’m 50, not 90 for Pete’s sake! I love that pic of the parking lot, but I hope you’re careful at night when nobody else is around. I’m a worry wart!
What I have discovered about myself is that I am a control freak – I guess I never knew that about myself! I like to sit in the same seat on the train, and if someone is in it, I’m like “um, that’s my seat?!” Ha! Agreed – we are only 50 – not 90!
I jump at the chance.

I know you do! I need to channel my inner Aunt Cele! I have mace in my hand – no worries! Plus, I live in the sticks – not to say nothing could happen, but I am aware of my surroundings.

I’ve got a package of chia seeds in my pantry and now i have to try making some chia pudding like yours! Looks yummy…might add a drop of almond extract too. I tend to be an introvert, so my first instinct is to decline social invites, especially one-on-one types. But knowing from past experience, I almost always feel so good about going afterwards, that I force/make myself accept! It gets me out of my box and that’s always a good thing. It sounds like your meeting up was a good thing too!
I will say that I prefer the chia pudding at least two days after I make it – I make it on Saturday’s to eat during the work week. I love how thick it gets then, love the idea of adding almond extract! I’ll have to try that.
And while I am a social person by nature, I think not being able to go for a long time the last year or so my husband was ill and before he died, it’s taken me a long time to get back in the swing of things.
I don’t love going out during the week – I much prefer coming home and making dinner. During the summer is different we are just on a completely different schedule. But once school starts back up my preference if possible is to go out on Friday’s and Saturday’s and cook dinner at home Sunday-Thursday
That’s an awesome plan! I actually didn’t mind missing the train, it allowed me to get in more steps to offset the beer and chicken 😛 I had almost 17k yesterday!
That’s exactly the opposite of what my late husband wanted to do – he HATED to go out on Friday and Saturday’s because of the crowds and wait – and would prefer going out on Monday’s and Tuesdays.
