I’ve had this glitty tank top for over a year and this is only the second time I’ve worn it. Why? Because I thought it brought too much attention to me. I always worry about my muffin top, but you know what? As my friend Shelley says “when you are in your 50s, you can do whatever you want!” So I wore it, and guess what? Got compliments on it. It’s okay to get outside your comfort zone – it will be okay!
Hannah and I discovered a new way to enjoy plain Greek yogurt – stirring in just a teaspoon of lemon curd – omg – out of this world! It’s tart, but sweet, and perfect for this overnight oat bowl. For the oats (2 servings) I cooked 1 cup of oats with 1.75 cups of unsweetened vanilla almond milk. Brought it to a boil, then cooked for 2 minutes, stirring constantly, then letting it cool. Of course I had to add blueberries to offset the lemon in the yogurt. So good – perfect summer breakfast.
I was so busy at work yesterday. A mandatory hour meeting threw me off and right when I was about to walk to my sisters office, I checked my blood sugar and it was only 72. Rats. So I ate lunch at my desk, only to have to clock back in early because one of my bosses needed something right away. My leftover taco was delicious – paired with fat free refried beans and 2/3 cup frozen hashbrowns, lunch was 5 points.
I am so proud of myself – I haven’t bought anything at the train station for my train ride home – no chips, small packages of cookies, wine even! I’ve been snacking on fruit and it’s been delicious – these cherries are amazeballs. Check out how big they are!
I knew I had defrosted beef for beef and broccoli, just wasn’t sure if I was going to have it with rice or pasta. I worked an hour late, so didn’t get home until 7:45, so pasta was the quicker option.
This was just a throw together dinner with what I have on hand, but I had a couple dozen people ask me for the recipe on Instagram, so I am posting it here.
I am sure you’ve heard the term “cut across the grain” which makes tougher cuts of beef like this eye or round, tender and easier to eat.

I brought out Tony’s Le Creuset wok last night. I can’t remember the last time I used it. He dated a woman who bought it for him and tried to take it back when they broke up, but he convinced her it was a gift, so he kept it. It weighs like 20 pounds, but it holds the heat so well. I just wish I could make fried rice like Tony! You can watch his video here on how he made it. (I’ll link to it soon – the internet is spotty on the train ride in this morning!) 😛
Since I got home late, I didn’t go to the gym, but still managed a decent amount of steps.

My new favorite Overnight Oats recipe is Key Lime. 1/2 C. oats, 1/2 C. of milk of choice, 1/2 plain Greek yogurt, 1 tsp lime zest, 1-2 Tb lime juice, sweetener of choice to taste (I use Stevia) and 1/2 tsp. of vanilla extract. This morning I added a Tb of sliced roasted almonds too! So good! I love overnight oats. So easy to put together at night and have a yummy ready made breakfast in the morning. Now I’ll have to try the lemon curd too!
