Next time you are at the grocery store, buy Bolthouse Farms dressing to make this bang bang shrimp surf and turf.
I picked up a loaf of the 35 calorie bread from Aldi last weekend. While I love that each slice is only 1 point, it doesn’t make the best toast – a bit too flimsy for these toppings – note to self, spend the points on better bread!
That being said – this is the perfect combo of sweet and savory – one had 1/3 container of Wholly guacamole, egg, and bacon with EBTB seasoning, the other was 1 teaspoon of peanut butter, sliced strawberries and crushed honey roasted chick peas. 7 points for both and delicious – it just would have been better on sourdough bread 😀
Jenn and I decided to walk over to Maggie Daley Park and walked past the Bean. It was 60 degrees and glorious!
Love seeing the green grass – I’ll be taking advantage of some of the free concerts this summer.
Soup and a sammie was on my lunch menu. I took 2 cups of leftover bolognese (sans the meat) and pureed that with 2 cups beef broth and a pinch of crushed red pepper – instant tomato soup! I had rotisserie chicken and avocado on a 2 ounce ciabatta bread. So good – lunch was 8 points.
I love using Wholly guacamole as a spread – the mini 100 calorie packs are 3 points, but it’s usually 2-3 servings for me.
I don’t have a garage, so the three of us park in my long driveway. If I know I am going out later, or will be the first one out before anyone else, I’ll just park in front of my house. The benefits of living in the sticks, no one cares if you park in your yard.
I was happy that I did though because I saw that I had a package from Bolthouse Farms!
I already knew I was going to do something with shrimp, but I wasn’t sure what I was going to make yet. This is the shrimp I buy – it’s $17 for this 2 pound bag, but I don’t think $8.50 a pound for 21-25 count shrimp is too bad. It thaws in about 5 minutes, and is already peeled and deveined – yes!

As soon as I tasted this sriracha dressing, I knew that I was going to make bang bang shrimp – it tasted just like it!!
You guys, this could not have been easier! I had leftover Certified Angus Beef from grilling on Sunday, so that was the base of my dish. Just a quick pan fry of the shrimp, I let it cool, and while the shrimp cooled I sauteed some sugar snap peas in a teaspoon of ponzu sauce, then tossed the shrimp in a tablespoon of the sriracha dressing. OMG, you guys! This was so good!! It’s slightly sweet, spicy, a touch of vinegar and the perfect companion to the beef.

I was all set to go to the gym when we had a bit of a plumbing problem. We only have one bathroom, so that presented a bit of a problem, but after 20 minutes we got it fixed. But then I looked behind the toiled and was like “shit, when was the last time I cleaned behind there?!” and spent the next 15 minutes cleaning the bathroom. By the time I looked up and saw it was already 8:45, I realized it was too late to make it to the gym, so I did the Fitness Marshall on YouTube for 30 minutes. He has short videos that are fun, but I realize I have no dancing abilities whatsoever. Still, I ended up with nearly 17,000 steps for the day, so I’ll take it.
Carrie – can you believe it was TWO YEARS ago that we met up?! That’s insane! You’ll have to let me know the next time you guys come to Chicago – or I’ll have to do a Minneapolis road trip! 😀
I had another great day on track. I avoided leftover food from both breakfast meetings and lunches – have you had a DoRite Donut?! And cookies the size of my head leftover from Corner Bakery. Still need to up the water intake – I’m at about 60 ounces – hope to get 80 in today.
And if I don’t have to work overtime tonight, I’ll be hitting the gym. And will probably have more tacos for dinner. Is it weird that I haven’t even had breakfast and I am already thinking about dinner?!

I would not do well in a house with one bathroom for three people. My daughter and I have the bladder the size of a soy bean so someone is always in ours. You would hate us on road trips. It made me giggle how you got distracted with the bathroom cleaning. I do that with EVERYTHING! Your dinner looks amazing and way to go on the steps. I have barely got 6K the last few days, too much time at my desk 🙁
Ha, yep, you wouldn’t be able to live in my house with just the one bathroom! There were many times when Tony peed off the front deck if I was taking too long in the bathroom 😀
Do you do “walk breaks” at work? I always print to the printer farthest from my desk, and take the stairs between floors instead of the elevator – one of my bosses is one floor above me, so I get in lots of extra steps that way.
My office is basically the size of a gazebo (that is what it used to be) so it’s not so big to walk around. I do get up and stroll around my desk every thirty minutes or so but it gets pretty hum drum walking around my desk 🙂

whenever we are in the city we stop at Do-Rite because they make GF donuts and they are a real treat for my celiac kiddo!
I love avocado toast – love, love, love it – I typically have it for dinner though.
My low carb avocado stack that I’ve been making — a big slice of tomato, topped with sauteed spinach, topped with avocado, topped with an egg — I usually have 2 of these. Very filling breakfast and only have to count 2 points for avocado.
That sounds amazing, but can you believe I don’t like sliced tomatoes?! I like tomatoey things – I’ll even do bruschetta – its the tomato seeds that gross me out 😀
