In Hannah’s amazing organizing of my pantry, um, turns out I had about 15 cans of beans of all kinds. Do I suddenly panic when I am in the store thinking “do I have any beans at home?!” And sadly, its still chili weather here, so Saturday morning I realized I had everything to make chili.

For breakfast I had a waffle sammie – 2 points for the waffle, 2 points for the cheese and the rest is free.
My inspiration from dinner was inspired by a: Hannah discovered we had FOUR packages of chicken breast in our freezer, so Sunday I defrosted one package and marinated it; and b: as soon as I saw Tieghan post this on her Instagram I took a picture to remind myself to go back to her Instastory and swipe up to get the recipe from her new cookbook. But I didn’t go back in time and missed the recipe.
So I improvised. My marinade: olive oil, garlic, fresh dill, Greek seasoning, salt, pepper and crushed red pepper. Instead of pickled onions I made a quick braised red cabbage – just saute red cabbage in a couple tablespoons of dill pickle juice.
My tzatziki is 1/2 cup Greek yogurt, 1 tablespoon chopped fresh dill, 1 teaspoon garlic, 1 teaspoon dried onion, 1/2 cup shredded cucumber, squeezed dry.
I made the naan over the weekend – I hope you try my recipe, so good! So I pretty much nailed her photograph 😛
I noticed Tieghan said “Wow” on my Instagram post, so we are basically best friends now. 😀
Huge shout out to my roommates! This place behind my shed was just a bunch of overgrown brush, stacks of wood and debris from when trees were cut down. They cleared it all out and even split some wood for the wood burning stove! That was a lot of hard work – thanks guys!! Jacob said he was going to get some grass seed – I don’t think there has been grass on this part of my property for 10 years!
It was 25 degrees when I woke up today. I really wanted to stay in bed with Roman. My sister is in the Bahamas and today the high is 89 degrees – #lucky! Hope she’s having fun.

Ice packs, save them! I had 4-5 ice packs with the cheese win here (Cabot), and those were the best. ice. packs. ever. I was so sad when the last one bit the dust late last year. Seriously they would stay cold after 2 days camping in the frigging desert!
I have about 20 of them in my downstairs freezer – you are correct, they are amazing!!
Thanks for the reminder. I was going to cook up some chili this weekend and then life got in the way. That will be a great weeknight dinner I can throw together after I defrost the chicken 🙁 Luckily for me the weather has dipped just into the 50’s at night. Perfect chili weather. For you it would be time to break out the flip flops and make your summer grilled salsa. The Kadults are so great. It is nice to hear about someone from their generation helping out and doing stuff. Hannah & Jacob you are both amazing!
Ha, you are correct, I would have flip flops, shorts and a tank top on if it was in the 50s!
