I do love that each breakfast on my Carb Cycle program is high carb – something about jumping your metabolism with carbs because I think bacon and eggs would get old after a while. I thought about making breakfast muffins yesterday before work, but wasn’t sure what I wanted to do when I saw that I had sourdough bread and that sealed the deal.
- 2 slices sourdough bread, rolled thin
- 1 ounce deli ham
- 1/4 cup chopped baby spinach
- 1/2 ounce American cheese
- 1/2 cup egg whites
- 2 tablespoons spicy salsa
Heat oven to 350. Roll out the bread and then use a bowl to cut out a circle and get rid of the crusts. Spray a muffin tin with Pam, then gently press the bread into the muffin tin. Divide the ham, salsa and egg whites between the two muffins, then top with the cheese and bake for 20 minutes.
The bread was slightly crunchy yet the filling was fluffy if that makes any sense. These would be perfect for a brunch because everyone could add their own personal favorites of veggies, cheese, etc. With the watermelon this plate came in at 309 calories, 8 fat, 30 carbs .8 fiber and 26 protein.
It was a partners birthday in my office yesterday, so even though I am carb cycling, doesn’t mean I can’t bring good treats! I made blueberry scones with lemon glaze – I adapted the recipe from here. I’ll rewrite it because I did make some modifications to bring each scone down to 247 calories, which I don’t think is too bad!
The biggest tip I can tell you about scones is that no matter what recipe you are making, when you shape your dough into a circle, put the dough on parchment paper on a cookie sheet and let it freezer for about 45 minutes. It gets firm enough that you can use a bread knife to get nice clean cuts before baking.
Meal #2 – plain Chobani with sliced peaches and granola
Since I had running club after work, I switched it up and did strength at lunch – a new exercise to me? The wrist curl – holy balls that was hard! Guess I haven’t built up any forearm muscles!
Meal #3 was an Aldi Italian sausage topped with some pizza sauce and mozzarella and put under the office toaster oven broiler. I mixed the remaining pizza sauce with a can of green beans – the flavor of pizza was there!
My co-worker that I am doing this running club with had to go home after work to watch her son because he husband got called into work. I am very proud of the fact that at 9:45 that night she texted me a picture of her 30 minute run from Map My Run – she wanted to be accountable to me and not take a pass – so cool!
So here’s the deal with the running club. There are definitely people who know each other – whether they are neighbors, high school friends, whatever. We are half way through our program so I said hello to everyone since I was by myself. Tried to strike up a couple conversations that went no where. And well, basically ran by myself. Yesterday was 3 minutes walking, 7 minutes running for 30 minutes.
My goals: Not let my blood sugar drop so I could finish strong. Shot bloks are amazeballs and taste like eating candy! 2. Get faster as I went along. I kept reminding myself “it’s only 7 minutes!” and never once thought of stopping. I decided to believe that I could, so I did. It made all the difference! How many times have you talked yourself out of doing something because it was hard. Me? All the time. But once I put a positive spin on it, it became that much more attainable and I was very proud of myself for that. Look at my last .38 miles – at an 11:57 pace! Um, that’s fast for me if you didn’t know. And while a few thoughts popped into my head thinking if I didn’t weigh 165 pounds and were closer to 140 – I wonder how much faster I could be? But I quickly tossed those thoughts aside because I did it. I showed up and did the work and didn’t chicken out because it was just me.
So by the time I got home I was very hungry, and had steak on the menu. My blood sugar was 80, so I needed some carbs, so I tossed in 4 ounces of potatoes into the deep fryer to have on the side with the steak, mushrooms, and 1/2 teaspoon of rosemary butter. Perfect meal. That was a 7 ounce steak, I ended up eating half even though I probably could have eaten the whole thing.
CONTRACTOR NEWS UPDATE! OMG, these guys are amazing! I have windows, my wood has been treated and the insulation is starting to go in. Not sure what is on tap today, they usually get here around 8 when I am leaving work and we chat a bit. The windows will be trimmed in black to offset the white house.
So much light! Gah, it’s so exciting!
Alright, have to get this show on the road – totally excited because I am going to another friends house tonight who just had her kitchen remodeled and she is hosting her first Cooking Club in her new kitchen tonight. The theme is Mexican and one person is responsible each time for the entrée, and everyone else is assigned another task. Love the idea of using bread for the base of an egg breakfast. Egg muffins but with carbs! Also love seeing the progress on your running. And the house! Eek! Looks so good in there; I’m sure you’ll be very glad when it’s done.
Thanks Erin – and yes, so excited about the living room. Truth be told since Tony died have spent hardly any time in the living room and it’s the biggest part of the house! Seeing his empty lay-z-boy chair would bring a lump in my throat, but having everything new might make me use it!

Hooray for the comments working for you Louise! I am not sure about freezing these kind of muffins because I think the thawing and reheating might make them funky – I don’t see why they wouldn’t keep in the fridge for several days though – just pop them in the toaster oven or under the broiler to heat through. 😀
I think you are doing great with the running! It’s hard when you don’t know anyone. Back when I was able to run, and did run, running was lonely for me. I started with what you are doing – walk/ run, and kept on going until I hit half marathon.
I had 5 or 6 friends who also trained for and ran half marathons. But here’s the thing. In my very best shape ever, at 130-ish pounds, I was able to run about a 10 minute to 10.5 minute mile. All my friends ran around 8 minute miles. It kind of sucked to be honest.
The work on your house seems to be coming along great!
I wish I would have brought my headphones at least if I knew I was going to be running alone – oh well! Thanks – one of my friends just did a half marathon in Vancouver and she was telling me “we should do it together next year” so we’ll see where this leads!
Yep, the progress has been remarkable – I may even be able to start paining this weekend!

I really need to try one of your recipes as all the scones I have ever tried have been too “crunchy/crumble” for me. Another month here before I will tackle baking. 🙁
One of the local bloggers in my area had people over for dinner. Although we didn’t actually cook anything, we brought our own dishes, but every other month there will be a different theme – last night was Mexican and I was assigned a side dish, which I’ll post the recipe tomorrow – it was a quinoa/corn/black bean side dish with queso fresco and pepitas – so good!
That’s one reason Tony never even TRIED my scones because the first one he ate was super dry and he swore them off for good – mine are tender and flaky – I am going to email you – I’ll be in Florida next week!

Slower runners generally do run alone, especially in running clubs. But you never know, you might meet someone who is your pace – that’s how I found my running partner Pete, and we ran together for nearly 10 years. Keep up the good work!

I was actually smack dab in the middle as some of the runners haven’t actually started to run and are walking – hopefully my friend makes it this week.

Dinner clubs are so much fun! I have been in one a couple of years ago and we had a different theme everytime too. Everyone would bring the ingredients of the dish she would make and we would all cook together. We always started on a Saturday around 4 pm and I never was home before late at night.

That’s where ours differed Fran – everyone brought dishes ready to go so it was more of a social, get to know each other then eating kind of cooking club – but maybe as we progress we’ll cook more – still fun though!

That dinner club sounds like such fun! I would love that! Um – yes, I do talk myself out of lots of things. I don’t necessarily think it’s too hard, but I almost always think ‘what if I can’t do it?’ – just doubting myself and assuming I’m not capable. However, sometimes I wonder if that’s just my excuse because I’m lazy and don’t want to do it? I know – I know – sounds crazy and way too analytical! Hello??? Over-analyzing?? I’m doing it right now – EEK! I remember a mom/daughter combo from the biggest loser and the daughter was always saying ‘what if I can’t do it??’ when it came to the challenges and her mom was like..”but what if you can?” That should be my motto…and anyone else’s that has these thoughts that only sabatage good intentions…BUT WHAT IF YOU CAN?
