I actually haven’t minded our cool mornings lately. The only bad part about it is that I don’t want to get up in the morning because it is such perfect sleeping weather. I woke up yesterday morning, grabbed my phone and saw this “Congratulations, you won the Illinois State Lottery!” I won $6. Jacob asked me what I would do if I won the lottery and I told him I would move to Seattle, buy a food truck and get to business. My Bizzy Kitchen sounds good for a food truck, no? I’d be open for breakfast and lunch only. Homemade biscuit breakfast sandwiches, kick ass hash browns, and soup and sandwiches for lunch. Somehow I am going to make that a reality, just not sure how unless I win the lottery!
I ended up having another one of my bagels yesterday morning for breakfast, only open faced with fresh fruit.
My friend and I walked at lunch – while still a bit chilly we will take a sunny day over warmer weather any day of the week. I discovered that the Map My Run app shows you the splits of your walk. I guess we picked up the pace for the second mile!
Over the weekend I poached a couple pieces of chicken breasts that I had to use up. My chicken, black bean and corn quesadilla was so good from the day before yesterday I made it again.
Here is the set up at my office kitchen. The only thing that’s missing is a stove!
I had every intention of going to the gym after work, but when I went to check my blood sugar, it was only 139. I guess I gave myself a bit too much insulin at lunch – gah.
My store had chicken legs on sale for .59 cents a pound last week. Jacob loves fried chicken, so I made my copycat KFC fried chicken.
- 1 teaspoon paprika
- 1 teaspoon black pepper
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon celery salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
Mix all those together with 1.5 cups of flour and mix well. In a separate bowl, add two eggs and 3/4 cup of milk. Whisk until combined. Dip the chicken in the egg mixture, then the flour mixture, then repeat. I did this step yesterday before work and left the chicken in the fridge all day. When it was ready to fry, I just tossed the chicken in the seasoned flour one more time. I fried at 350 degrees for 15 minutes.
I think by sitting in the fridge all day (or overnight) that it helps the coating stick to the chicken, so you get a bite of that crunchy goodness in each bite. Oh, and season them with a touch of salt as soon as they come out of the fryer.
You will note that these are not greasy – having the fryer helps maintain the correct temperature so that it sears the outside without absorbing any oil. I ended up only eating one – I am sure Jacob will eat the leftovers cold!
Is it Saturday yet?? No? Well then I guess I better get dressed and go to work.

I’m with Christina… why Seattle ? I also like the idea of a traveling food truck… that would be cool. I really don’t understand the thing about eating meat on the bone???? If you are choosing to eat it what matters if the bones are still in it? Call me crazy 🙂

Well, it’s a place Tony and I always thought we could retire too, so there’s that – and I think that the temperature is what I am looking for – here in Chicago it can go from -25 degrees below zero to 100 degrees – I’d like to end up in a place that doesn’t have that extreme of temps. 😀

We love fried chicken and I usually make it once a year, during the summer, when I can put the Fry Daddy outside on the patio. Keeps the smell and the mess outside!

Randi, I quickly discovered that the cost of living in Key West will most likely always be outside my price range. Tony and I always talked that after we retired if we could both live anywhere, where would it be – and the Seattle area always came in first. And I’ve never been there!

There used to be a food truck that wandered around Appleton….guess it did pretty good then they opened up a restaurant. Just heard on the TV that today at Pierce Park there will be some food trucks coming as far as Milwaukee for a special gathering and if its a success they will do it again. Sounds like fun. The guy they interviewed was making BBQ on grills in a food truck. He said that Food Trucks are getting VERY POPULAR…..hurry Biz so you can be a part of a popular FOOD TRUCK REVIVAL!!!
Oh I eat meat off the bone…pork chops, chicken, T-bone….all good!!! How did you poach that chicken….is that a special bag you used??? The quesadillas looks really good. Course anything you make looks good and makes me hungry. (I didn’t eat before reading your blog…..so yeah….need to go eat something!!) Have a good day!!
I poach my chicken in a pot with water that just covers the chicken by an inch. I bring the water to a boil, then turn it down to simmer for 10 minutes, then take off the heat, leaving the lid on, for another 10 minutes. I just chopped it up and threw it in a ziploc bag – these are dollar store bags so they are different colors 😀

The best fried chicken around here is Hattie’s. They are in Saratoga and were featured on a Bobby Flay Throwdown and won. So good.

Do the food truck! I love fried chicken. I like the breast and I always eat it with a knife and fork. I am not a bone person. I do Love lobster and will get my fingers dirty for that! Of course I probably do that every 5 years!

I never used to be able to eat chicken wings or anything like that, but Darren loves them, so I’ve adapted.
There are some cool food trucks here in Norfolk that I’ve seen so far, but Seattle is a much cooler city! 🙂

That kitchen cracks me up every time I see it. We grilled a chicken last night, and I served the kids the legs. They both balked, saying they dont like chicken on the bone. I was all “when I was kid they didn’t even have boneless chicken”. They ate it, and enjoyed it. Though I had to cut the inside off the bone for them.
Yep, I’d have to do the same thing for Hannah, except then chop up the chicken into tiny pieces! 😛
My Grandmother used to make her famous Kansas Fried Chicken once or twice a year, and damn, it was good. Now that she’s gone, I don’t bother with fried chicken…it’s not the same.
BTW, you could make that food truck dream happen without winning the lottery. Sell your house, buy the food truck, and live in a cheap apartment. With your energy, you’d get the business up and running and successful pretty quickly, and then you can find a nicer place to live.

And yikes….I cannot eat meat off the bone…it sickens me. No drumsticks or wings either. I cannot explain it. My mother was a vegetarian and cooked meat once in awhile but never anything with a bone…to me..the bone reminds me it used to be a living creature and I cannot stomach that.

Oh, we love, love fried chicken but with just the two of us now…..it is hard to get out the big fryer. Your coating sounds so easy and delicious, and I am going to make it. I have a cast iron skillet so will try frying the chicken in it. We got a new Popeyes in our town and the spicy chicken is so good and love their coleslaw, but I am sure not too healthy for us. Don’t like the atmosphere either and I am seduced by the darn coke which I adore but don’t “do” anymore……sigh……. Maybe you have the answer here for us. Thanks and we so enjoy your blog!
I used to love Popeyes spicy chicken, but the closest one to me now is 30 miles away (um, somehow I know that!). And my Mom only used a cast iron skillet and it turned out wonderful.
