I love this time of year. The changing of all the colors of the trees. It’s not too hot, it’s not too cold. I went on a long walk on Saturday morning and it was so refreshing!
It was a pretty low key weekend. When I was meal planning I realized I had some frozen blueberries in the freezer. On Friday when I was walking on the treadmill, I was watching The Chew. They were doing all kinds of breakfast foods, and they were talking about how to make fluffy pancakes. One of things I’ve always done is let my batter sit for at least 15 minutes before starting my pancakes. Mario said that one of the things he did to make fluffy pancakes was to use seltzer water. Huh.

I love the blueberry/lemon combination. And I like that I can have two pancakes for 200 calories – nice! That leaves more room for bacon. Ha!
The plans changed with Hannah and her friend, so I ended up staying home yesterday. You know Tony watches his football all day, so I was Bizzy in my Kitchen. I redid the Chicago Italian beef pizza, this time using shredded deli roast beef and jarred roasted red peppers. OMG, this turned out so good! I submitted this one to the Sebastiani Pizza Recipe contest.
Later in the afternoon I decided to just . . .relax. There are so many weekends that I feel that I have to get it all done, and I got a cup of coffee, got on my comfy chair, and watched t.v. shows that Tony would never watch in a million years: I am Pregnant and . . . I am a stripper. And Hoarders – OMG, there was this one guy that used to be an orthopedic surgeon who had the worst roach infestation – he used to love cooking and his one daughter was bringing her husband and sister in law over to help with the situation. The daughter said “show them the spice rack Dad!” It was one of those pull out spice racks and as he pulled it out, there was about 1000 cockroaches poured out of the wall. So gross, but I am mesmerized by the whole thing. I’ve always told Hannah that she would be perfect for that show because of her love of organization!
Are there shows that you only watch on your own because no one else will watch them with you? I know a few people who have guilty pleasures of watching The Real Housewives, or the Bachelorette!
And with the blink of an eye, the weekend is over. My gym bag is packed, and after testing out my knee just walking last week, I am ready to start strength training this week in addition to cardio. Last week I stopped the night time snacking and drank all my water every day. Last week I was 171.6.
Slow and steady wins the race, right? I’ll take it. This week I plan on ditching the wine, adding the strength training back in and drinking 80 ounces of water a day. I just have to crack up at my mis-matched feet though – thanks for sitting on one foot so it didn’t grow like the other one Jenn!
Was your weekend low key or jam packed? Happy Monday – make it a great day!
I have to watch those hoarding shows by myself because MAK’s grandma is a hoarder and he can’t stand to watch it. I also watch The Chew on Hulu and I am a sucker for Master Chef, Top Chef, Chopped, etc.
We could totally be t.v. watching buddies Erin! I love how you catch up with my blog and Instagram in spurts 😀
I sure love the colors of fall but will have to rely on your photos to enjoy it. We are green almost all year long and the few trees that change color seem to go from green to dead 🙁 I would be delighted with a little fall weather too.
Aw, that’s so sad Kym! Although this is my favorite time of year, Tony disagrees – because then it just means that everything dies and we go straight to winter – his least favorite season 🙁
I like to watch that show “Too Cute” on animal planet, the one about puppies and kittens? Pretty sure I’m too old to be the demographic for that!
Those pancakes look amazing! Think I’ll have to try them out pronto, looks like something hubby would love.
Your pictures of the trees are just beautiful! I love it.
OMG Sarah, we just found that show not too long ago – makes us want to go out and get a puppy every time we see that show 😀
I am all about the guilty tv shows…especially 19 kids and counting and sister wives! We had a pretty packed weekend with family in town but today we got Columbus Day off! I’ve never had it off before…must be an east coast thing!
Score on the extra day off! I used to get it off when I worked at a firm in Chicago that was in Court all the time, the courts were usually closed so we closed too. It’s been years though!
You fall photos are beautiful! Huh, who knew that about letting your pancake batter sit? love that tip!!!
Happy Monday!
Letting the batter sit Courtney let’s the baking powder do it’s magic – the longer it sits the more bubbles you’ll see 😀
Your weekend sounds great! The leaf photos are lovely.
I figured out about mousing over the bar chart on the FitBit web site to see a person’s daily numbers. You got in a lot of steps this weekend!
Our weekend was low-key. I temporarily misplaced by FitBit (left it in the pocket of my bathrobe, ugh), so I had to fudge the numbers by adding activity through the web site. Errands on Saturday and a walk in the National Arboretum on Sunday. Pretty nice, overall.
I love seeing what other people are doing on FitBit! Although I did a friend request with this guy, and he says his daily average is 50k, and that is just not fricken possible!
We purposefully kept this weekend low key and it was awesome!!! In fact, since today is Columbus Day Chris is off and we are having another relaxing day!!! Perfect since it’s cool and rainy!
That’s great Kim! Hope you enjoyed the time off with your hubs!
Congrats on making progress! I hope to see some progress on the scale soon too…
Well you’ve had a lot going on with your wedding and all – you were a beautiful bride!
I cannot watch Hoarders. Not ever. It makes me sick to my stomach!!! (but it’s so fascinating sometimes I just can’t turn it off – haha)
Glad you got to enjoy some down time yesterday – you deserve it! You kicked butt last week – keep it up!
The worst part Heather was when they showed his bed, of course piled with all sorts of shit, and they pulled the sheets back and there were THOUSANDS of cockroaches in the bed – ew!!
I miss the fall. We really don’t get much of one in California. Not so many leaves, plus it’s been in the 80’s. It does cool down at night though. Looking forward to REAL fall since I made more soup this weekend.
Good job on the slow and steady! I recommitted to tracking my calories 3 weeks ago, down 3.8 pounds so far. It’s a challenge. I try, REALLY try, to keep my wine intake to one day per week (we have a potluck with the neighborhood on Sundays). So I don’t have wine open at home. Well, the last two weeks I’ve had OTHER parties, so I didn’t exactly stick to that. (That may be why my weight loss was smaller.)
My goal is to really stick to it all winter. I think maybe being “hard core” over the holidays is the only way to go. I lost my 1st kid’s baby weight from November to February. If I say “no” to the sweets and the alcohol (with the exception of one day per week), then it’s easier than saying “just a little”, and having that turn into “way too much”. We will see. I am tired of getting stuck at the low 150’s then bouncing back up to 168. No more!
You and me both Marcia! I agree, if you could lost your 25 pounds over the holidays once – you can do it again! 😀
oh my gosh that story from hoarders makes my stomach ill. I could never watch that show…yikes! Those pancakes look perfect! I’ll have to try the seltzer water trick. Hope the pizza wins!! Glad you had some you time!!
Watching it is kind of like driving by a car accident – I just can’t help myself!
Ha! Sorry I sat on your foot when we were womb mates
That’s okay, I forgive you. Just thanks for stealing all of Mom’s nutrients she gave us so that I have the sugars and arthritis, and you don’t. 😛
