Since I am working a double today, I decided to sleep in a bit. My alarm went off at 6:15 and I turned it off and said “I’ll just sleep for like 15 more minutes.” Um, more like 45 minutes! I still have an hour before I have to leave for work, but it was nice to get that extra 45 minutes.
I had the last piece of my potato crusted broccoli quiche for breakfast yesterday. I decided to have some Chobani on the side and made myself a mini caramel apple parfait. One container of vanilla Chobani, half a chopped apple, 1/2 and ounce of toasted pecans and one teaspoon of Smuckers caramel sauce. It tasted like I was eating dessert!
It was a rest day from strength training, so I decided to do the stairmaster. I tested my blood sugar before working out and it was only at 140, so I had a snack of half an apple, some honeydew melon and a tablespoon of the cinnamon peanut butter.
Turns out that wasn’t enough so sadly, my blood sugar was dropping and I only was able to do 35 minutes, but I went 94 floors and 1.97 miles – not too bad!
When I got back to my office, my blood sugar was 64. I ended up not even taking any insulin at lunch since it was low carb. I cooked one whole zucchini in my microwave for a minute and a half. Let it cool a bit, then sliced it and scooped out the seeds. At work I heated up the leftover chili and made Cincinnati Chili Zucchini boats. With just a few jalapenos on top. This was so delicious!
I had steak on the menu for dinner. I decided to make mashed potatoes and asparagus on the side. I also picked up some blue cheese over the weekend and put that on top of the steak – I puffy heart blue cheese on steak! My lighting is all wrong on these pictures – oh well!
I bought this brown gravy mix at Sam’s Club. Only 3 tablespoons of this mixed with 1 cup of water – just nuke for 2 minutes, and whisk together. And 1/4 cup is only 20 calories.
Super simple and delicious. And I had no after dinner eating at all – go me!
I am hoping the weather isn’t too bad tonight – the last few times I’ve worked at the restaurant it’s either been sub-zero, snowing, or icy roads, which put a damper on my covers. Hopefully tonight we’ll have a good crowd – makes for a much busier night and it goes by faster. I am also trying out new shoes. I bought some Dr. Scholl shoes, but after being on my feet for 6+ hours, I was sore. I found these Sketchers at my thrift store – barely used and only $7 – they normally retail for $60!
I’ve been wearing them to work all week, and so far they seem pretty comfy. But then again I do sit at my desk most of the day, so we’ll see.
I am hoping to get some new running shoes this weekend too. My bosses gave me gift cards for Christmas – right now the shoes I am wearing to workout in are probably over three years old!
Question of the Day: What is your favorite brand of shoe?? My shoes now are Saucony, and while they are fine, I am not in love with them.

I’m with Helen and Shelley: go and try on the shoes, the brand doesn’t matter. It’s what the best shoe for you is. When I started running I just bought some cheap running shoes and was injured within a month. I went to a running store and came home with Brooks Adrenaline. I bought a pair of Asics later because they had a nice pink color but I didn’t like them for running. Now I’m sticking to my Brooks, I buy them everytime (nowadays online because they are always right) and use the pretty pink Asics for my cardio workouts at home.
The zucchini lunch looks delicious!
I am an Asics girl. Most of the time, I opt to wear my Vibrams at the gym, but I do have a pair of Asics I wear in the winter.
Those zucchini boats look awesome. I am not a huge fan of zucchini unless it’s not too mushy. When you cook it in the microwave, do you chop the ends off at all? Or just throw the whole thing in?
I’m a Brooks girl when it comes to running shoes! But I find everyone has a very specific preference about what they choose to wear on their feet.
One of my all-time favorite summer meals is a grilled steak, asparagus and mashed potatoes. Why am I not making it in the winter???
Asics are my favorite. I always find them at Ross, TJ Maxx or Marshalls. Sometimes online too, like Zulilly or those other types of companies. They feel good the second I put them on.

My favorite running shoes are Mizuno but otherwise I tend to mix it up a lot!!!

I like Asics for my daily walks but I do put my own inserts in them for extra support.
Go to a good running store. The best ones will tell you what is best suited for you based on your foot. They know what they are doing. Then you can look online for what they advise. My daughter sends me her old Nikes when they are worn out from her running. I use them for walking and I love it because they are so nicely broken in. And since she ran a marathon in them i consider them my lucky shoes!
I went to a running store and got fitted for supported Brooks. Love them.
I swear by Asics for athletic shoes, and and Teva for everything else. 🙂
Go get yourself fitted at a running shoe store (not Footlocker.) They’ll put you on a treadmill with a camera set up on it to watch your stride. Your foot might turn in or out or you might run neutral. After watching, they can recommend the perfect shoe for your feet.

Listen to Helen’s advice on the shoes – go get yourself fitted. You’d be amazed at how different shoes can feel, and the right pair is going to last you (haha, especially knowing how long you keep shoes) for a good long time. I like my Brooks, but I’m intrigued by the Hoka One One – the shoe looks clumpy and awkward, but lots of my running buddies are wearing them and swear it’s like walking on a cloud. One of these days I’m going to try them on, if I can get past the Forrest Gump look of them, lol.

Brooks is my running shoe of choice. Have a new pair I need to give a try on the treadmill to determine if they are keepers. Must. Get. My. Ass. Running! Those zucchini boats look amazeballs!
I need new shoes too. The last ones I got were Nike, but they cause my toes to go numb on the left foot if I wear them for more than two or three hours. It is so strange because they are identical to the previous pair I bought, which were perfect. I see they sell the Asics at Kohl’s so I might go check them out.

I like New Balance The higher the number the better the shoe. They have great support and wear really well but can be pricey.
I like Saucony, Asics, and Brooks. Right now I’m wearing Saucony.
I have those Sketchers! I got them on sale, too. They aren’t that great for support, though, I found after a while. They were nice when I couldn’t bend and could just slip them on and off. And in the winter, they do not keep your feet very warm either. But $7 is a steal!
I love Asics. I love Brooks too but for me, the Asics last longer and wear better. With all the running I do, I don’t want to have to buy a new pair every 3 months, which is what happens with Brooks.
You do realize it’s not just about the brand of shoe? There are different types of running shoes: stability, cushioned stability, neutral, neutral cushioned, minimal, pronation etc. If you don’t already know what type you should wear, before you buy anything go to a proper running store and have them type and fit you. Very important!
I love Asics and also brooks. Look on 6pm.com they always do sales on running shoes you might find something in expensive. Brooks can run upwards of 100. I got mine for 30. same with the asics. or check out Ross, TJmaxx they always have them too…..happy shopping 🙂
