I am kind of kicking myself about not taking advantage of the summer weather and walking before work. It just sort of wakes me up. It was a brisk 57 degrees when I started out yesterday.
There are a lot of hills in my neighborhood too, which gives me extra hamstring and quad work.
I didn’t know how far I went until I got home – I ended up walking 2.6 miles – not bad!
I know I make a lot of pancakes, but I love that one batch can be several breakfasts. I checked my Chobani to make sure it wasn’t one of the ones that were recalled, and it was fine. I had a lone sweet potato in the fridge. I baked it earlier in the week for something else and never did anything with it.
I have a confession to make. I don’t tweet. Like at all. The only reason I have a Twitter account is so that I can follow our kids. But the other day I saw Jessica linked to a sweet potato breakfast pancake, but the link didn’t work. I tweeted back that the recipe link didn’t work, but I didn’t hear back from her, maybe I am just not doing it right – it was my 7th tweet though!
So I made up a recipe, kind of based off of my Chobani banana granola pancakes..
Sweet Potato Banana Pancakes
- makes 10 pancakes (I used a 1/3 cup measure for each pancake)
- per pancake: 140 calories, 1.1 fat, 26 carbs, 1.4 fiber and 5.9 protein
- 60% of your daily Vitamin A per pancake!
Ingredients:
- 1.5 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of salt
- 3 tablespoons sugar
- 1 egg
- 1.5 cups skim milk
- 1 6 oz. container of Chobani plain Greek yogurt
- 1 sweet potato cooked (about 3/4 cup of sweet potato)
- 1 banana
- pinch of cinnamon
- pinch of nutmeg
Mix the dry ingredients together. Add the wet ingredients and mix until combined. Let the batter sit at least 5 minutes. Cook about 2 minutes on the first side, 30 seconds to a minute on the second side.
My pan was a little hot AND I was multi-tasking yesterday before work, so they got a little dark, but they were delicious. I had 3 ounces of leftover beef roast for more protein. I didn’t know the calorie count until last night, so I probably only would have had 2, but super filling for a 550 calorie breakfast!
I cooked off the rest of the this morning to freeze for next week.
I knew I wanted to do a treadmill workout at lunch – Friday’s are my rest days with Insanity. I found one on Pinterest and modified it a bit to make it a 45 minute workout. I took way less insulin at breakfast so I would have a lot of room with my workout. Nothing worse than starting out strong only to have to stop and eat because of low blood sugar.
When I checked before my workout it was 310! Yikes, I didn’t mean for it to get that high, but I figured I would just adjust it with insulin after the workout.
Well, I didn’t have to adjust a thing – I really worked out hard in that 45 minutes – I’ve never had my blood sugar drop so much – from 310 to 54 in an hour!
So when I got back to work I immediately started eating my cantaloupe (1.5 cups!) while I heated up my lasagna soup. The problem with having a low blood sugar like that is that it makes you feel like you want to eat, eat, eat until that feeling goes away. But I knew it would come up in a few minutes and waited it out. I ended up not giving myself any insulin at lunch and two hours after lunch it was 160. Sometimes I really hate having the sugars.
Tony was already enjoying a cigar and a beer when I got home. He greeted me with a glass of wine. We hung out for a little bit, but then both of us were hungry, so I ended up putting a quick dinner together of beef tostadas – super simple and dinner was ready in 10 minutes.
My day was a little high on the carb side – 202 grams! I need to bring that down in my menu next week.
Stats for the Day:
- 40 minute 2.6 mile walk before work
- 45 minute 3.4 mile treadmill (6 miles total for the day!)
- 1745 calories, 68 fat, 202 carbs, 19 fiber and 86 protein
We are supposed to get thunderstorms later today – I love a good storm, especially when I have nowhere to go.
I have Max Interval Sports Training on tap today – 55 minutes long, but it’s one of my favorite Insanity workouts.

All I did was cook up a sweet potato, mash it, and toss it into pancake batter. I added a little more water to get it thin enough. It was great!
Thought of you this weekend when I canned a batch of spicy ancho-jalapeno lime jelly. I haven’t officially tried it yet because I want to give it to friends and family, but the scrapings from the pan were so tasty. And I used low-sugar pectin, so it’s not mega-sweet like my wine jelly. I always thought low-sugar pectin meant you used artificial sweeteners, but it truly only means you need less sugar to make it gel up.

I can’t begin to imagine what that would feel like to drop your sugar level that quick in an hour. I have been having low blood sugar and low blood pressure lately. I’m not sure what it means. Someone told me it may be a pre-diabetic sign. I love some of the photos you have posted on Instagram. You are good at “staging” your photos. I never think about laying extra stuff around the food like extra chips, etc. I think it is because I don’t have the heart to waste the food. I guess that is what Kyle is for. A critter food disposal.
Kym, have you had your “numbers” run at your doctors office – they’ll be able to tell you from a blood draw if you are pre-diabetic – fingers crossed you aren’t.

We go through pancakes so fast! Even when my husband makes a double batch, there usually aren’t too many leftovers. I love them too!

Yes…that would be interesting as Kim said above. Since I have been on this “mild” medication for diabetes. My blood sugars have avereged for 7 days 121 and for 30 days 124. When I was not on meds by blood sugars would vary between 140 and 175 there were a couple of times it was over 200 and it would scare the – – – – out of me.
Now my problem is the weight situation….gaining since I have been on the meds…geez there never is a happy medium. Course one problem is I love to cook and “eat” my food….it tastes so gooooood especially that lasagna soup… 🙂
Sadly I know a couple people who routinely have blood sugars in the 200-300 range and because they feel okay now, aren’t too concerned. Meanwhile, it’s doing damage to the nerves, etc., and by the time you feel bad, it’s too late.
One day you should do a post about the normal levels and when you have to take insulin and all of that – I don’t really know much about it but wish I knew more.
That’s a good idea Kim – I wish it were simple to control – some days I do what I think is the exact same thing and get different numbers. Enjoy your sons cross country meet!
wow, I would be scared with a BS that low. I haven’t had a low in a long time. The lowest mine has ever gotten was 49 and It happened after I had gone to sleep. I woke up sweating, my heart palpitating and I was so confused. Have you looked into getting the pump? Its a godsend and I’m sure your insurance would cover it since its considered durable medical equipment. I just got a new one yesterday, it broke and the company overnighted me a new one. The pancakes look yummy.
I’ll have to check with my new insurance once my deductible is paid – thanks for the reminder about it! Yep, I’ve woken up with lows like that – the sweat is the first sign for me.
