Dear Chobani. Oh how I love thee. You have been good to me the last couple years, sending me free products, t-shirts and spoons. I’ve been spreading the word about your wonderful yogurt so much so that my boss who once thought she hated Greek yogurt has come to love it.
But this week you weren’t on sale. And the Yoplait was and it was winking at me, and before I knew it, it was in my cart ready to make the trip home with me.
And while this wasn’t as good as Chobani, it was pretty tasty.
I ended up running a couple errands at lunch with my co-worker. We stopped at T.J. Maxx – I love that place for their home goods section – so many cool dishes and food items. I ended up picking up a bottle of agave nectar for only $2.99 for a 12 ounce bottle, and got these cute mini casserole dishes – 2 for $4.99.
My friend didn’t bring a lunch so she suggested Chipotle, and while you know I always bring my lunch, it sounded really good.
I was in Tabasco heaven!
I ended up getting the burrito bowl: chicken, brown rice, black beans, romaine and some cheese. When I got back to the office, I did the nutrition calculator, and that whole dish was 610 calories! So I ate 2/3 of it, for around 400 calories – oh, and I got the spicy red salsa – so good! Also in that dish? 1500 mg of sodium! I drank a lot of water yesterday afternoon!
I had simple grilled chicken thighs on our dinner menu, and decided to make a quick broccoli gratin side dish. I let the microwave do most of the work!
Broccoli Gratin for Two
- each serving: 247 calories, 16 fat, 332 sodium, 14 carbs, 1.8 fiber and 13 protein
Ingredients:
- 2 cups chopped cooked broccoli
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup non-fat buttermilk
- 1/2 cup shredded cheddar cheese
- pinch of pepper
Cook the broccoli in the microwave for 2 minutes. Let it cool enough so that you can chop it up. I prefer my broccoli to be crisp tender.
In a saucepan, melt butter. Add flour and cook 1 minute. Slowly add the buttermilk, making a roux. Remove from heat and add cheese and stir until combined. I think there is enough salt in the cheese so I didn’t add any, but you could if you wanted to. Add the chopped broccoli to the cheese sauce, mix and divide between two oven safe dishes. Put under the broiler for a couple minutes until nice and bubbly.
I also had 1/2 a cup of rice on the side, but since the casserole dish was a bit big, I just added it to my broccoli and ended up stirring it in. Oh, and I may or may not have added buffalo Tabasco to my broccoli too.
I never used to like chicken thighs. Truth be told, I never even tried them until a few years ago, I had myself conditioned that I didn’t like dark meat, and there is so much more flavor going on with thighs. I had a chipotle honey bbq sauce on mine, so good!
I have got to get back on the exercise train! Turns out when I get off the train for too many days in a row, it’s hard to get back on the train. Can you leave me a comment today telling me to get my ass to the gym today?! Thanks for the push!
Come back tomorrow – I have a couple new recipes. Right now I am making banana flax seed buttermilk pancakes with agave nectar and applesauce. And over the weekend I made pickled radishes that are amazeballs. Veronica, you will totally love this recipe!

Those casserole dishes are too cute. I often look at the random discount house wares at Home Sense (canadian version of TJ Maxx), but I always walk away without buying anything, because I don’t “need” them.
And I have to say, I kinda hate the word amazeballs as well. I don’t hate that the people who use it, I just hate the word. If that makes any sense.
That’s funny about the “amazeballs”. I said it around my son once and he told me it was stupid! I’m headin’ right now to the treadmill so you can do it too! 😉

Also…only because you asked….go to the gym 🙂 I’m having trouble with that myself lately, but have gone the last 2 days, so I’m hoping to stick with it.
It’s pretty much hit or miss there, that’s why if I see something I like, I can’t think about it because if I go back 99 times out of 100 its gone!
I used to teach next to a TJ Maxx; I love their home goods section but haven’t been to one in quite some time… The mini casserole dishes are so cute! I’m a sucker for anything small… 🙂

Ok, you commented on two things I am so in love with.
1. TJ Maxx – I just found a pair of white skinny Joes jeans for 1/4 of the price. Those are normally $199 jeans!
2. Chipotle. Oh how I LOVE thee. I am SO OBSESSED. I always get a super healthy salad with veggies, no carbs, and PILE on the salsa, cheese, and cilantro.

I actually love the Yoplait Greek yogurts, confession, I buy whatever is on sale, so my yogurt varies every week.
I’ve only been to Chipotle once, I really didn’t like it. I think it was the rice, there was something that just was “off.”
They put cilantro in their rice, so if you don’t like cilantro that may be why!
That’s it! I’m not a fan of cilantro.
Yum…I ate chipotle for the first time last week. The veggie burrito was amazeballs (lol)…I <3 the salsa and the guac too.

I love me some Chobani too, but I’m so disappointed…we have none of the new product down here in Central IL yet. I’ve been dying to try the Chobani flips! I saw the Bites at a store last week but ended up with the Yoplait as well…It was a better deal!
Get your butt to the gym or take a long walk outside! It’s 80 and BEAUTIFUL here today, I walked the dog earlier and he got a bit overheated (doesn’t have the stamina he used to) so I’m planning on taking a higher intensity walk on one of the trails around my apartment later this afternoon.
TJMaxx kicks ass btw! My Mom and I just found some amazing pesto by a company called Elki. It’s lemon artichoke….SO GOOD! My mom already scouted out their website and is planning to order from them since it’s hit and miss at TJMaxx sometimes.
And you’re right about chicken thighs. So much more flavor and I feel like I don’t eat as much because I’m more satisfied. That BBQ sauce sounds yummy…is it a certain brand or made from scratch?

I love TJMaxx and Marhsalls for homegoods. I have found some great knives, kitchen gadgets and bake/cookware there. And you can’t beat the prices. I love the casserole dishes you found! Chipotle is basically the only fast food restaurant I will eat at anymore–their guacamole is amazing!!

You know, I’m a chicken thigh girl now myself, too and so are a lot of other people I know. It’s got me wondering if the chicken industry has ‘modified’ their product because the thighs definitely don’t have that wild taste anymore. I’m going to have to do some research on this one.
Yes…I have been to Chipotle a few times lately – we have to go to UCLA for follow ups on the surgery and there is one nearby. Yes, we should probably be eating more locally.
I went on their site to “build” my tacos before our last trip, and the sodium!! It is pretty much out of control for everything. Mostly it’s the salsa that really puts it over the top. Awful.

Yeah, you get what you pay for, if you go cheap, you get cheap……there’s nothing compared to Chobani. I am waiting for them to come out with a “cheesecake” Chobani yogurt, mmmmmmm wouldn’t that be good????

I can nudge you toward the gym but I am having problems of my own in that department. I got ready for my new Zumba class only to find out the lady has discontinued her morning classes and only does 8:00 to 9:00 at night. That will not work for me. Plan B is to check out the Anytime Fitness for free stuff. 🙂

Chobani was the only greek yogurt I’d eat for a long time. I loved it! I didn’t like any of the others. Eventually I tried the Costco plain Greek yogurt and I LOVED it! I love that it’s cost effective (you get 2 big tubs) and I can add my own fruit.
We belong to Sam’s club, I’ll have to check that out!

So…you know why yoplait is so much cheaper? I believe its not actually greek yogurt. See how it says “Greek” but not Greek yogurt (a lot of the other fake Greek yogurts say Greek STYLE). They put in additives to make the yogurt get thick, they don’t actually strain it. Anyways- glad you enjoyed. I understand how expensive Greek yogurt can be! Sometimes I just get traditional yogurt when Chobani isn’t on sale. I heart Chipotle. Their guacamole is my favorite. GET TO THE GYM!!
