I have to say, for it being a dreary, rainy overcast week, this week went by pretty fast for me – happy Friday!!
One of my bosses favorite breakfasts I make for her is breakfast wontons. I didn’t even know it until she said “remember the thing you made with the little cups and eggs?” So breakfast wontons made the menu yesterday.
If you haven’t baked wonton wrappers before, simply put them in a 12 cup muffin tin, press the bottom down so you end up with a flat bottom after they are baked. Bake at 350 for about 10 minutes – keep an eye on them because they go from being done to burnt really quickly. Once baked and cooled, just keep in a container – they will last a week.
This time I used egg whites, turkey sausage, baby spinach and 50% reduced fat Cabot cheddar cheese. I topped each one with a bit of salsa. On the side I had watermelon and oranges.
Thank you so much for all your suggestions of exercise apps! I quickly learned that not all apps are created equal. I was going to do a 20 minute arm workout on Workout Trainer before hitting the pool. I didn’t really look at the exercise though before hitting “play.” It was a robot voice and the person doing the exercise was like in slow motion. Very confusing.
So I didn’t waste anymore time on it and ended up swimming for 35 minutes straight without stopping – it was a good workout. There were so many people that I had to share a lane and this woman was an awesome swimmer, and even though she pretty much lapped me, she pushed me to go faster than I normally would.
Last Friday Tony went to the store to pick up steaks for dinner. He said “do you need anything else?” I looked at the sale flyer and saw that they had pork shoulder on sale for .99 cents a pound. Of course I needed that!
.Tony is still on the fence with pork, but that’s okay – I knew I would be sharing it with my SIL and my boss for lunch. I used a version of this dry rub, reducing the brown sugar down to about 1/4 cup though.
Then cooked it in my Dutch oven at 300 for 3 hours. I used the mustard bbq sauce my boss brought back from South Carolina – Maurices. I decided to make us pulled pork paninis. I put spicy pickles on my bosses sandwich, but I used my new hot gardiniera – Chicago Johnny’s!
My sammie had 2 slices of 100 calorie bread, 1/2 an ounce of Cabot reduced fat cheese, 2 ounces of pulled pork, baby spinach and a tablespoon of that giardiniera.
Crunchy, spicy, vinegary, cheezy – a perfect combination in my book!
So I know all of you have been anxiously awaiting Tony’s fried rice video! Well, we shot the video last night! Um, I am quite embarrassed that I’ve had my camera for 2 1/2 years and haven’t taken any video yet!
We like how the shots turned out, but quickly realized that neither he nor I have any video editing skillz. So we are going to work on it over the weekend, and hope to post it on Monday! It will be worth the wait.
Needless to say, dinner was amazeballs. This time he used chicken breast to make chicken fried rice. The only thing I add is a bit of sriracha to mine, but it’s so fricken good. I have to stop myself at 1.5 cups! Thanks for making dinner Tony!
Remember last year when I put out oranges and the orioles would come by and suck out the juice of the oranges?
We bought a bunch of oranges off the dollar rack last week, so I thought I could make it feel like spring if I could see the birds in my back yard. Yesterday Tony said “I am not sure who’s eating the oranges, but they are eaten!”
Yep, I think it’s Lyle! We’ve stopped feeding the squirrels nuts, so he’s taking his revenge by eating the oranges set out for the birds! (not to worry, the peanuts aren’t going to waste – I have 3/4 cup of shelled peanuts nearly every night – but I am tracking them!)
Those pictures were taken through my back door window this morning. I slowly tried to open the back door, but Lyle took the half of orange and ran into the woods with it!
It’s still cold and dreary, right now its 36 degrees, so while I wish I could start grilling at work on Fridays, turns out its still chili weather. I made up a new chili I really, really like. I am calling it salsa chili because it has 1.5 cups of my baja fresh salsa in it. I’ll post the recipe tomorrow.

LOL at Lyle taking off with that orange! My neighbor has one of those big iron tree things you can hang different bird feeders from and the other day I spotted a crazed squirrel taking off with a suet cake about half his size! He blasted up a tree and just sat up there watching me until I left! Freak!

Your boss and husband are two of the luckiest people. They get to eat your cooking! If the food tastes half as good as it looks (and I am sure it surpasses it), it has to be freaking fantastic.
Aw, thanks so much! But believe me, Tony doesn’t eat 50% of the stuff I make that’s either too spicy, too ethnic, or smells like ass! 😀
Oh those squirrels! Around here they get in the garbage, yuck. They even chew holes in the thick plastic to get in the bins.
They haven’t eaten our garbage yet – the racoons are already all over that!

I love your nature friends photos Biz! There is a squirrel that visits our back yard daily and he hides his treasured nuts in my flower pots! He drinks from our pool too – wouldn’t think the chlorine would taste good!
