Wow, this has seemed like a long week for me but I am so glad its Friday. Not only that, but yesterday we finally got a decent rainfall and the temps in the 70’s broke a 44 day heat wave Chicago had this summer. Let’s hope it stays like this for a while.
So I tried the Chobani Vanilla Chocolate Chunk vanilla yogurt and the verdict? I liked it. Not loved it, but liked it. It’s REALLY sweet. So when I had my parfait of the yogurt, 1 cup of sliced strawberries and 1/4 cup of granola? It was kind of sweet on sweet on sweet. Or as the Chopped judges would say “all one note.”
Breakfast comes in at 330 calories, 7 fat, 51 carbs, 4.9 fiber and 14 protein. I actually couldn’t finish it all, at the end it was just too sweet for me.
I was so sore yesterday from the 100 workout, that I decided to do the three S’s.
Swim, Sauna, Shower!
Here’s the weird thing though. It was about 80 degrees, overcast and a little sprinkly. I get to the pool and I am the only one there. In both the indoor and the outdoor pool, so it was me and 7 lifeguards! I ended up swimming for 30 minutes, sitting in the sauna for 10 minutes and then taking a long hot shower for 10 minutes.
But I am still really sore today. I might take today as a rest day and work out over the weekend, I’ll see how I feel later on today.
Over the weekend I made chicken noodle soup. Typically when I buy bone in chicken breasts, invariable we eat two and I stick the other two or three in a ziploc marked “make chicken soup!”
I don’t have a real recipe for chicken noodle soup. I put my frozen chicken in a pot, add enough chicken broth to cover the meat and let it simmer for an hour or so until the chicken is cooked through. I take it out and let it cool then add carrots and celery to the mix with salt, pepper and Italian seasoning. Once the veggies are almost tender, I crank the heat to get to a boil then add 6 ounces of noodles – this time I used mostacolli noodles.
When the noodles are done, I remove from the heat and add up the chicken that I’ve shredded.
With my cheese crostini on the side, lunch comes in at 471 calories (that’s two cups of soup!) 20 fat, 48 carbs, 1.1 fiber and 22 protein.
I actually had this shrimp recipe on my menu . . . doesn’t that look good?
But earlier in the week Tony wasn’t in the mood for shrimp so I just put the shrimp in the freezer. I’ve talked about how good Tony’s fried rice is. The rice has a bit of crunch to it, the eggs are fluffy, and he indulged me and let me add not one, not two, but THREE veggies to the rice.
While I have a rice maker, sometimes I cheat and just pick up a container of white rice from my local Chinese restaurant on my way home from work. A large container is only $2, and you know its going to be perfect.
I was Tony’s sous chef – I peeled and deveined the shrimp and chopped the veggies and then let him do his magic.
Tony brought this cast iron Le Crueset wok to the marriage – I love it! He’s got fast hands!
Seriously, this is fried rice perfection in a bowl. I ended up eating half of this, but I wanted to eat the whole thing. The only thing I did was add some sriracha to my bowl, Tony sometimes isn’t sure how much spicy stuff to add. Tender chunks of shrimp, fluffy eggs, crisp tender veggies, just so good. My guestimate is that my serving was 475 calories, 10 fat, 67 carbs, 3 fiber and 24 protein.
Stats for August 9:
- 1609 calories (um, guess someone had cheese and crackers after dinner!), 58 fat, 190 carbs, 9.5 fiber and 52 protein
- 30 minute swim – with the walking I did around the office, I am giving myself 1 mile
- 78.3 miles to go for my 100 miles in August
Who’s got fun plans this weekend? We have nothing special planned, which is actually nice. After my busy July going to Virginia, helping my Mom move, going to Michigan, it’s going to be nice to just relax this weekend. And hopefully I’ll finish my book and start on book number two!

Love, love, LOVE making fried rice at home, but I seem to have problems making rice in the first place. I end up doing like you did – using the white rice container from our latest Chinese takeout to make the dish.
Even better would be brown rice. I always ask for it as a substitute when we go hibachi. Makes the rice seem like it has more substance.
Tony’s rice looks so good! I can’t believe you were alone with all of those life guards, I’m still chuckling!
And what’s more embarassing is that I am not that great of a swimmer, so I imagine them talking amongst themselves for the crazy lady who is doing the side crawl for exercise! 😀

We are having similar weather in michigan, I was so happy to have yesterday and today not even break 70. Such a relief!!!
That fried rice does look perfect. I have a brand new wok I need to season but it is too hot to open the doors and windows and it will be a smokey task. We have no plans this weekend except sam’s club and lots of olympic watching. It is too hot for anything else.
That shrimp looks good–and so does the fried rice! I just ate lunch, but now I’m hungry all over again. 🙂
Bummer! I was really hoping that chobani was amazing. I still have to open mine. I guess its a good dessert yogurt. That fried rice- gets me every time. That is so funny about the pool- at least you didn’t have to worry about drowning. We have very sparse plans too- I’m thrilled
I love how you make chicken soup. I always have leftover chicken breast sitting in my freezer looking for a new dish to be put in. I love making my own fried rice. I can control the amount of sauce and add a ton more veggies like Tony did.
I used to make a chicken and rice soup with tarragon…no recipe, just chopped and tossed things in the pot. Maybe that’s why chicken soups are always so good – you just use what’s on hand and it all works out?
A weekend without a lot of plans sounds pretty nice – hope you guys get to enjoy it along with some nicer weather!
I haven’t felt well the last couple days so I made soup, maybe I’ll make another this weekend since it’s supposed to rain at least all day Saturday. Our high today is like 65, perfect for you almost winter coat time for me…no joke!! Is Tony’s fried rice recipe on here? If so could you put the link for me. I’ve been craving that too 🙂
Tony is one of those people that never really follows a recipe. I will tell you the steps however.
1. High heat of canola oil in the wok.
2. Add veggies first – cook until crisp tender, about 4 minutes. Remove to a separate bowl.
3. Add more oil, then cook whatever meat you have – this one obviously was shrimp. Remove to veggie bowl.
4. Add eggs (I think he used two) and scramble until fluffy. Remove to veggie bowl.
5. Add rice (he used the whole large container shown above!) and add a bit more oil and soy sauce. Then he pats the rice down so it gets slightly browned and crispy on the bottom.
6. Add everything back into the wok and stir well to combine – he does add a bit more oil and soy sauce at this point.
Tony, you’ll have to correct me if I am wrong! 😀
I do not oil in step 5 only soy sauce. This recipe is thanks to my friend who worked with me at a Japanese Teppanyaki restaurant in Sheboygan Wisconsin! Also, I did not cook the shrimp by themselves, I added them in with the rice.

I am so happy that our heat wave broke, too! Although now it’s raining today…oh well. Good for you, swimming! I gotta start doing that; it is so healthy for your body.

I don’t really have a recipe for my chicken noodle soup either. But the lovelies call it ‘Mom’s Cure All Chicken Soup’. They are convinced that it cures colds, the flu, allergy attacks and more! Hey, as long as they believe it and they feel better, why not? LOL
I was sick all week and all I wanted was some of my mom’s homemade chicken noodle soup–yours looks delicious! When I eat the chocolate chunk yogurt, it’s as a snack and the kids size one—but I do agree it’s pretty sweet.
It’s stormy and rainy here today, so I’m guessing a movie night for us, and tomorrow is double date night. Nothing too exciting, but it should be fun!
I’ve been craving Chinese all week and now I want fried rice! I’m not a fan of chocolate yogurt either. I’ve tried several and they are all just off tasting to me – probably the sweetness. Guess you’ll have to figure out how to use that in a recipe. Banana Bread maybe?
I actually think it could go well in a Green Monster, but banana bread sounds like a better idea! 😀
