I have to make this quick because some thunder storms are headed our way and I don’t like to have our computer on when its lightening and thundering!
This weeks WI . . . I gained .8. But I will take it – I am sure I ate my weight in cheese at yappy hour this week, and I ate a lot of salty things like sauerkraut. No worries!
Breakfast was a passion fruit parfait – 7 points.
With the leftover smoked sausage I decided to make a soup out of it:
Smoked Sausage Soup (made six, 1.5 cup servings at 6 WW points each)
- 6 ounces cooked smoked sausage
- 16 ounces cooked red beans and rice
- 6 cups chicken broth
- 2 cups water
- 4 cups chopped spinach
- 2 tablespoons chipotle with adobe
- tortilla chips for garnish optional (add points) š
Since everything was cooked already I simply mixed everything into a large container. When I got to work I just heated it up, added a couple crushed tortilla chips on top and a sprinkling of cheese, and this was a delicious and spicy soup. š
I had to meet with our accountant to do our taxes last night, so I knew it was going to be a quick dinner – in comes the $3.99 pre-made pizza. Dominick’s used to have only one giant size pizza for $5 bucks on Friday’s. They changed their prices and now offer the smaller size which is perfect for just me and Tony, and we still have leftovers.

These sliced jalapenos weren’t as spicy as I thought they would be – I would have put way more on if I had known! Not bad for a kicked up $4 pizza!
Question of the Day: Who’s making corned beef? For us the answer isHELLS YES!
I am going to throw it in the crock pot with some baby red potatoes and carrots. Neither Tony and I do cabbage, but I’ll warm up some jarred sauerkraut on the side for me.
Hannah and I are meeting my Mom for lunch – she’s so busy I am glad she’s able to squeeze us in. š So Hannah and I have our Big Bowl face on!

If I could figure out how to make corned beef without the corned beef ness of it and just have the cabbage and maybe potatoes I totally would
I’ve never made corned beef, actually I don’t think I’ve had “real” corned beef before, the Buddig stuff in the packet that I ate like 20 years ago doesn’t really count, does it? I do love cabbage though!
Mmm, I’d love some corned beef and cabbage today, Ray however isn’t a big fan :/ We’re having shepherds pie tonight…I guess that will make do. haha

I’ve never had corned beef :0 and we’re eating chinese leftovers tonight haha.
I’m saving that soup recipe.. I love sausage because it’s quick and easy protein! I’ve been working my way through a pack of trader joe’s garlic chicken sausage this week… good when you’re just cooking for one!

No corned beef for us today, but John made Irish Soda Bread that is to die for! I could inhale the whole loaf. Good thing I am biking today š

Your pizza looks awesome, we love making our own pizzas. We are not making our own corned beef, we are going out with my In Laws for a late lunch and a few St Patty’s day drinks. I am so glad I woke up and it is overcast, we are walking to our dining destination (better safe than sorry!) and my red headed husband has an ongoing war against the sun š

OH YES! One of my all time favorite meals! I usually request it on my birthday too, but corned beef is reallllly hard to find in September.
