I love my waffle maker. The only thing I don’t like about it is cleaning it, but after eating these waffles, I’ll never complain.
What I love about these is that they aren’t too sweet – the pancake syrup is sweet enough.
Pumpkin Waffles (made 16 pancakes – each one: 110 calories, .9 fat, 20 carbs, 4.9 protein and 1.1 fiber = 3 WW points each)
- 2.5 cups white flour
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger (loved the addition of this btw)
- 2 eggs
- 1/2 cup egg whites
- 1 cup pumpkin puree
Mix the dry ingredients together. Add remaining ingredients and stir until all the flour is combined. Let the batter sit for 15 minutes.
Heat up your waffle maker (mine heats up in about 5 minutes) and cook for 4-6 minutes. Serve with fresh fruit and pancake syrup.
The best part is that now I have 7 more breakfasts from this one recipe. I put two waffles in each ziploc bag – I can just grab and bring to work – just have to pop them in the toaster.
I got my workout on yesterday too! I went to the new gym. I did 35 minutes on the elliptical, then did 25 minutes of strength and abs. For the strength training, I did 3×12 reps – various machines – triceps, biceps, glutes, etc. Except each rep I made a heavier weight – my last set of the lat pull? 70 pounds!

I also laid out my workout clothes AND work clothes for the week – go me! My mantra this week? No excuses. Oh, and no pretzels either. š

Wait – you are supposed to clean the waffle iron? I just give mine a quick wipe and pretty much nothing sticks to it now. Kind of like a good cast iron pan. We use the waffle iron probably 3 to 4 days a week between the 2 of us!
Waffles are such a great breakfast! And way to go with laying everything out for the week! I try to do that for myself and I do it for the kids too, it’s so much easier than finding everything in the morning!
Laying out your clothes and workout clothes is such a good idea. I might have to steal it to ensure that I get plenty of workouts in this week!

haha…is it gross that when I make waffles at my Mom’s we never clean the waffle maker after we’re done? Unless some of the batter has poured down the sides? Haha! Now I want waffles and have no waffle maker…grr.
And great mantra! Putting out your workout clothes is a great idea! When I feel extremely lazy I even sleep in my workout clothes sometimes because then I really have NO excuse!

Waffles are something I only eat out and it probably has to due with clean-up. I actually don’t even own a waffle maker any more. There’s a place right around the corner from us where the only thing I order is their Pecan Waffles. Yum.
I’ve been laying my stuff out at night before I go to bed too. Not that I won’t get up and exercise, I just find it that much less aggravation when it’s C-O-L-D early in the morning.
Yep, next time I make these I am adding pecans – yum!
Pumpkin is so awesome. It is so nutrient dense, full of filling fiber, has so few calories and is delicious. You can never go wrong with pumpkin. I need to stay away from the pretzels too. They’re always around because my kids love em’.
I love waffles but haven’t owned a waffle maker in decades…and that’s probably a good thing, lol.

I made some dijon-brown sugar glazed salmon this weekend. And chicken parmesan, but with spaghetti squash instead of pasta. Both yummy and plenty of leftovers.
These are very similar to a pumpkin waffle recipe that I use and LOVE. So good!
Those pumpkin waffles look beautiful! (Umm..and I’m sure they taste great too!) I love the idea of making a batch & freezing them for work. Easy breakfasts are what I need and this looks perfect!

I am the same way! I absolutely love waffles, but cleaning that maker is the pits!!!!!! Yours look just perfect. Great job on the workout & on laying out your clothes (I always do that the night before too!). I made Two peas and their pod potato soup last night (sans cheese plus more broth)- so good!

Funny that I was thinking this weekend about deciding on my work clothes for the week in the weekend but decided to stick to what I already do: decide the night before what I’m going to wear to work and put out everything ready for my workout of the next day. The last thing is needed since I workout first thing in the morning and it saves time when everything is ready.
