I think you could call my theme of the day “freezer diving.” With so much food in the house I was adamant about not going to the grocery store, even though one of my favorite grocery stores just opened up on November 30 in Crystal Lake – we have a Fresh Market!
I went looking in the freezer to see what I could come up with for breakfast and lunch. I found these in the door of my freezer. God only knows how long they have been there – but they were fully cooked. I defrosted them in the microwave, and then made yet another scramble (sick of these yet?) with eggs, spinach, red pepper, chicken sausage (only 60 calories a link too!) and . . . GUACAMOLE!
God I am a sucker for the 50% off bin! When Tony and I were at Sam’s Club a couple weeks ago, I thought I saw the Wholly Guacamole 100 calorie packs. The next time I went back, sure enough, I couldn’t find them anywhere. That’s about the only downside of Sam’s Club – the people who man those little sample tables have no clue where anything is.
Tony went to Sam’s the other day and lo and behold – he found them! They were in the refrigerated cheese section. All 18 100 calories packs for only $8.98! They are good until the third week of December too.
More freezer diving and I found five chicken meatballs in marinara sauce. No date of course. I even went back through my archieves and I can’t remember when they were made. I defrosted them and threw them in my bag. Paleo says no meatball sub, so I made a meatball salad!
I had about 1/2 cup of marinara sauce, 5 chicken meatballs and I served them over baby spinach and carrots. Once I started eating it though, I wish the carrots were cooked – it was a bit too crunchy. And I got distracted half way through eating my lunch and had to reheat it – the spinach was nice and wilted and the 1/2 oz. of Parmesan cheese melted really nice.
I didn’t wake up in time to work out yesterday morning, so I had to get out at lunch – in 42 degree weather! I decided to walk/jog/spring a 5k and was happy that I finished in 38 minutes! With a warm up and cool down, it was a 45 minute workout. It felt great, although my legs are a bit sore this morning. I ended up doing my upper body strength and core workout last night. 😀
Do you all use Tastespotting to come up with dinner ideas? I do. I knew I had defrosted two pork chops for dinner. I wanted something different. I quickly found Nicole’s (Heat Oven to 350) apple pecan pork chops and I was sold. Only one problem. Tony is not too big of a fan of fruit with meat. I emailed him Nicole’s picture and asked “would you eat this?”
He said because he likes apple sauce with pork chops he might like it. Woot!
I did it a bit differently from Nicole – because I used two pans. I had one thick chop (for me) and one skinny chop for Tony, so I cooked the chops low and slow with a lid on.
Her recipe called for adding the apples right to the pork. I chose to reduce the butter to 1 tablespoon as well as the brown sugar to 1 tablespoon. I used on fuji apple for the two of us and 1/4 chopped pecans.
Once the pork was done, I plated the pork and poured the pan juices into the apple mixture. After I served Tony’s apples, to my half I added 1 tablespoon of Dijon mustard to my sauce and poured it over my chops. I had a can of potatoes so I had those in a third pan just getting slightly crispy – I had 1/2 cup potatoes on the bottom, my chop (probably about 4 ounces of meat – gave the bone to the dog) and then the slightly sweet and savory apple pecan mustard sauce.
These are goddamn company pork chops! And the best part? This was finished beginning to end in about 20-23 minutes. Love it!
While I LOVED this dish, Tony liked it, which is way more than I thought he would. He proobably could have done without the pecans, but I thought they made the dish.
I haven’t figured out the calories for dinner or the rest of my day yet! I think I did pretty good. 😀
Thanks for all your well wishes for Tony’s surgery – we appreciate it! I’ll leave you with Day 2 Awkward Family Christmas picture. Have a great Friday!
I’m freezer diving now too, sure gets your creative juices flowing doesn’t it?!! Love your pic, you are so cute!
Have a super weekend BIz! 🙂
You are very creative with the leftovers in your freezer, love that.
The pork chops look delicious.
Way to go on that lunch run, you look great in the pic by the way.
Hi Vat. Just catching up on your last couple of posts. So sorry to hear that Tony is heading back to the hospital. I’m sending big get well wishes for a fast recovery to him, and hugs to you. BTW….SMOKIN’ deal on that guacamole! WOOT! Have a great weekend!!!! Take care of yourself while you are taking care of everyone else!
Those chops do look mighty tasty! These family photos are killer. Have a great weekend Biz and Tony!
OMG…is lady in the picture holding a ferret or a baby goat????
I normally like fruit and meat (pork and apples, chicken and apples), but one time I saw strawberry beef on a menu and just about threw up at the combo. Ick!
nice job using up freezer food…i go to the grocery store for ingredients to cook what i’m craving way too often. i was actually thinking about this last night…the boy has been working out of town quite a bit this month and i don’t feel the urge to cook a nice, full meal as much when i am solo. there are so many things i already have on hand that i’m going to try to use first! it would be nice to save on my grocery bill too 🙂
As always, everything looks delicious to me!
You have the rosiest cheeks – and your skin is beautiful [what is your secret woman? I must know – and don’t tell me eating healthy, because you know me and that ain’t working over here. heehee] Just gorgeous!
What is it with men & not liking fruit with meat? Pooldad would be all over the pork chops with apples. Then again he is a huge fan of any cooked fruit that resembles pie filling. 😀 They look great.
Hope you all have a great weekend. Enjoy!
I am sold, those look Great! I haven’t made pork chops in forever. Glenn too is not a fan of sweet meat or veggies and I love em’. But I think he is a fan of pork chops and applesauce and these look irresistable.
Chris and I love those 100 calorie packs, we even freeze them! I usually just break them up so that the packs aren’t hooked together anymore (since the plastic seems to rip more easily when they’re not frozen) and then thaw them in a cup of warm water before dinner.
One of the first big meals I cooked for Chris was a ham with chutney…only to find out a year later that he was completely grossed out by the idea of fruit with meat. He still gives me a hard time about chutney to this day 🙂
I just emailed you asking about Tony, thinking he was probably almost completely recovered by now and now see he’s going into surgery again! I’ll have to see if I can find out what’s going on from a past blog I missed. You look so cute in that pic with your rosy cheeks. 🙂
You can freeze the Wholly Guacamole packs. 🙂
I think the pork meal looks fantastic. I’m coming to dinner!
The Guacamole freezes well if you don’t use it all by the expiration date!
Oh my. What a delicious dinner!!!!!!!!!!!!!!!!!!!!!! I have no words.
The apples and pecans look delicious!
I love, love, love awkward family photos!
Those pork chops looks heavenly! Oh my gosh!!
I love family awkward photos! They are hysterical!!
I always balk at fruit and meat together too. Not sure why but just the other day I was wishing I could find a pork loin recipe without cranberries, pears, or apples lol!
I guess I just prefer savory over sweet… but those do look really good.
Freezer diving will be happening at my house this week coming up. I noticed we have lots of leftovers and I need a break from cooking to do some Christmas shopping on my free evenings.
Have a great weekend!
Those Awkward Family Pictures crack me up. That’s a good one. The man looks terrified.
The weather has been great for outdoor workouts lately. Glad you were able to take advantage of it on your lunch break.
I always loved pork chops and apples together. Your dinner looks delicious.
Have a great weekend Biz!!!
Can I be your company? Those look AMAZING!!!! I love pork and apples together (all pork products really: bacon, ham, sausage)
Your pork chops look fancy! And probably very filling too!!
I’ve officially signed up for the half marathon in April – we set up our page last night with Team in Training.

I’m with Tony on the fruit/meat combo, but I have to say that I would totally eat that dish!!! It looks amazing!
