It seems to never fail that after a weekend of crappy weather, the first day of the work week is actually nice. Although it was on the cool side, I’ll take sunshine over warmer temperatures any day of the week.
Over the weekend I made the easiest pancakes. I tweaked a recipe, so as I was making it I wasn’t sure of the points. The recipe made a full dozen using my 1/3 cup measure. I only ate two to be on the conservative side in case after I put it into eTools they came out five points each.
Imagine my surprise when one comes in at only 3 points, and then when I added two to my points tracker, two pancakes were somehow only 5 points – nice!
Easiest Pancakes
- 2 cups flour
- 1tablespoon sugar
- 1/2 teaspoon salt
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 2 cups soy milk
- 1 tablespoon lemon juice (I like citrus in my pancakes š )
- 1 teaspoon lemon zest
- 2 eggs
Mix dry ingredients. Mix wet ingredients. Mix until just combined – the batter may be a bit lumpy, that’s okay. Now let the batter sit for 15 minutes. You will get fluffy pancakes once you let the baking powder do its magic.
So on Sunday morning I had this:
And then for breakfast yesterday morning I decided to make an egg sammie using the pancakes – I pan fried an egg, and after I broke the yolk and flipped it, I put 1/2 an ounce of deli ham, 1/2 ounce of American cheese and took it off the heat and put a top on it when I took a shower.
When I came back, the edges of the cheese were all crispy – I just microwaved the pancakes, put the eggs in the middle and this was a delicious and filling 10 point lunch. When I told my sister about it, she kinda gagged at the idea – but it was so good – the pancakes only have a tablespoon of sugar in the whole batter so they are not overly sweet.
I found yet another path to walk near my office, and I think its the best one yet. I thought I would get bored with just walking at lunch, but I am loving it. This new path has sidewalks that lead to a bike trail. It was a windy 50 minute walk and it completely energizes me for the afternoon.
Lunch was zucchini lasagna, which I haven’t made in ages. This time though I did use three squares of lasagna noodles, and reduced the eggs to just one, and substituted 3/4 cup of cottage cheese instead of the ricotta cheese. When I put it into the recipe builder, I was still happy that 1/2 of this casserole dish is only 7 points. I had my lunch over a cup of baby spinach, and after I took the picture, just cut it up with the spinach with a knife and fork.
My lunch: 7 points for the whole dish. š
My store had pretzel rolls on sale – a package of six for $2.99 – so I decided to make burgers using the pretzel rolls – each roll was 3.2 ounces, I ended up shaving off about 1/3 of the bun and giving it to the dog since the bun was so much bigger than my 3 ounce burger. And we had sweet corn for the first time, and it was really good! All together, dinner comes in at 12 points.
Stats for Monday:
- 29 points (no wine!)
- 10 activity points earned: 30 minute swim, 50 minute walk at lunch, 15 minute walk after dinner
- average blood sugar 132
- not pictured all the fruit I ate: 2 cups watermelon, 1 cup canteloupe, and 2 bananas (I blame the higher blood sugar on the fruit – but its all good!)

mmmm, the pancake sandwich looks delicious! I love breakfast foods!! I’m also diggin’ those pretzel rolls – I really want to make some, just haven’t gotten around to it. Along with pretzel bites, bagels, english muffins…and the list goes on!
I am not a big fan of pancakes but if it was made into a waffle I could eat it like a sandwich! I love your creativity in the kitchen.
Back when I was on a low carb diet I use to make a zucchini/roasted red pepper lasagna that was so good and no noodles!

Breakfast pancake sammies are the best! I like to put a slice of bacon and tiny drizzle of syrup and it’s amaaaazing! š Also, i love your idea on the lasagna. Looks like a delish and healthy way to have lasagna! Your food always inspires me!
Those pancake sammies totally remind me of McDonald’s McGriddles which lots of people poo-pooed when they first came out. However, my husband (who never eats fast food) still dreams about them!

I love using pancakes or waffles in place of bread. I use my protein pancake recipe and it works great!

I have some pancakes in the fridge, so I might actually try later this week.
