10 years ago today I had my first date with Tony!  We had talked on the phone for probably 20 hours before we met.  I was just coming back from visiting my brother Charlie in Des Moines for the Memorial Day weekend.  You new readers can read the story of how we met here.

It really was love at first sight.  Two days before we were to get together for dinner he asked me where I wanted to go.  I replied “I don’t care where we go, what we eat, what you wear, or what I wear.  I only want . . . you.”

Okay, you are going to think this is weird, but I bought these at the store last week and they have been in my fridge ever since.  Truth be told, I was kind of scared to open them!  Sophia, have you ever seen canned hard boiled quail eggs before??

I was also afraid at what I would see (or smell!) upon opening the can!

I dried some off on a paper towel.

And guess what I decided to make with them?  Breakfast pizza!  Except I used  a light flatout wrap, 1/4 cup pizza sauce, 5 quail eggs (only 39 calories for 5!) and 1.5 ounce mozzarella cheese.  Baked at 375 for 10 minutes.

The perfect bite splashed with Tabasco!  The quail eggs taste exactly like real eggs, except the yolk tasted way creamier to me, almost like a deviled egg filling!  this whole pizza was my breakfast:  268 calories, 24 carbs, 23 protein, 12.2 fat and 10 fiber.

I wanted to do the bike machine again at lunch today – I had hopes of doing a 10 mile trail, but the longest one was only 4.4, so I did that one twice, and then a 1.5 sprint ride at the end.  Can I tell you I love seeing the finish line?  And you know what I pictured?  All the 39 other 101 Days of Summer challengers lining the sidelines and cheering me along – so thank you to everyone for virtually pushing me!

47 minutes and 10.37 miles! 😀

Lunch was more stir-fry – the closer we get to the end of the week, the less creative my dishes are becoming!  Lunch comes in at 315 calories, 44 carbs, 20 protein, 3.8 protein, 3.8 4.8 fiber.

I loved the fresh squeezed lime over the top too!

Most of you know I hardly ever eat snacks.  But since my breakfast and lunch were so low in calories (not intentional!), I had two snacks: 1/4 cup almonds and 1 oz. of peanut butter stuffed pretzels, or i.e. crack pretzels!  Snacks totaled:  278 calories, 21 carbs, 9.1 protein, 18.9 fiber and 3.9 fiber.

I wonder if they make spicy cheese stuffed pretzels - now that would be my crack pretzel!

For dinner I defrosted two kinds of meat – one small steak that Tony and I split, and one giant chicken breast . . . or so I thought!  When I went to take it off the grill I realized it was two small ones stuck together, so I had to cook the “inside” a couple more minutes!

The temperature dropped last night and it was so comfortable on the deck while I grilled.  Love the view from our deck!

My plate: 4 oz.  steak, 4 oz. chicken, 4 oz. rosemary potatoes and 1 tablespoon of Buffalo Wild Wings spicy sauce.  Dinner:  617 calories, 39 carbs, 78 protein, 14.6 fat and 3.8 fiber.

In the mail I got these True fruit things.  At first I thought it was like Crystal Light, but upon further investigation, turns out its like have a “squeeze of fresh fruit” in your water.

I had the lemon one in my water at dinner – and while it did taste like lemon, I think I’ll stick with the real thing.  Have you seen this before??

Guess who got up at 5:45 this morning?  Yep, that would be me!  As soon as I hit publish, I am getting changed to do a Group Power class at my new gym from 7:00 to 8:00 a.m.!  Erica said it’s a lot like the Body Pump class that she teaches, so I am excited!
