I had Mexican food twice yesterday!! Truth be told, I could have Mexican every day and never get sick of it!
For breakfast yesterday I used up some leftover broccoli, shredded zucchini, diced ham, egg beaters and mozzarella cheese to make another sort of crustless quiche. I thought this would be 4 servings, but after I entered it into www.calorieking.com, I realized I could eat half for only 338 calories! 😀
Then pour in the egg beaters, 1 ounce of mozzarella cheese on top and salt, pepper and crushed red pepper.
Then bake for 35 minutes at 350.
I loved the bottom layer of potatoes!

- Shred zucchini and squeeze out water. Layer 2/3 cup canned potatoes in a square pan – chop broccoli and sprinkle over top. Add zucchini and diced ham. Pour two cups of Egg Beaters over top and finish off with 1 ounce mozzarella cheese.
Bake at 375 for 35 minutes, or until eggs are set.
My office ordered from a nearby Mexican restaurant for lunch. I picked the chicken fajitas with corn tortillas. I ended up eating: 3-five inch corn tortillas, about 4 ounces chicken, green pepper, 1/2 cup refried beans, 1/4 cup Spanish rice, 1 ounce of tortilla chips and a tablespoon of sour cream.
When I got back to my desk, I entered my lunch and it comes in at a whopping 717 calories, 85 carbs, 57 protein, 15.8 fat and 13.1 fiber! Thank goodness my breakfast wasn’t high in calories! 😀
I had a surprise visitor yesterday afternoon!
Hannah came to visit! She didn’t have to be to work until 5:15 so she stopped by to say hi and brought me a skinny vanilla iced coffee! 😀
It’s hard to believe that in 20 days she’ll be done with school! Since she has straight A’s she doesn’t need to take any finals. And she may get an award for best attendance in high school! She only missed one day her freshman year – she’s even contemplating not ditching on senior ditch day because she wants that award! Did you have senior ditch day when you went to high school – and did you??!!
Dinner was more in my control – I ended up making shrimp tacos – while there are a lot of recipes for chipotle marinated shrimp I would have liked to try, I had to consider the spice factor for Tony. In the end I went simple and just cooked the shrimp in taco seasoning with a bit of water.
This dinner was so easy to put together – maybe 20 minutes total?
My plate: 1 low carb tortilla, 3 shrimp, jalapeno, 1/2 ounce mozzarella cheese, 1 tablespoon nacho cheese, lettuce, cucumbers, 1/2 ounce of tortilla chips and 1/2 cup pinto beans.
Did you have Mexican food yesterday?

I did have enchiladas on Cinco! Your shrimp tacos look wonderful!
Your daughter is too cute! I definitely ditched on Senior Ditch Day 😉 …among many other days ..oops!
I don’t know why I’ve never thought to use taco seasoning on my shrimp for shrimp tacos! I know I will next time…they look delish! Hannah is such a pretty and sweet girl.
Hope Hannah has a great prom!
Your dinner looks amazing!
I could eat Mexican all day long! Hannahs gorgeous! Congrats to her for straight A’s & almost perfect attendance. Have a great weekend!
Great mexi eats!
We had ‘beach day’, as we lived close to the beach, and it wasn’t just for seniors, it was for anyone that could go, on hot June Friday’s. I don’t think I missed many… 🙂
hannah is my favorite girl name ever! because it is a palindrome. love it.
I was such a dork in high school, I probably did extra credit on senior skip day…
We had fish tacos yesterday. Yummy and festive! 🙂
Great food, time with your daughter, a starbucks drink…Life is good.
My sister’s name is Hannah 🙂
I could eat Mexican food twice a day, every day for the rest of my life! The breakfast food looks so good!
Those shrimp tacos look perfect! I didn’t have any Mexican food yesterday, but it was our anniversary, sooo we had other yumminess. I might make up for it, though. In fact, I know I will make Mexican very soon. hehe
Jenn
does tequila count as Mexican food???
i could eat mexican food every day too – and chinese food….
Great looking egg bake.
Yesterday we had margaritas and chips and salsa. As for senior ditch day, I only joined in after I was accepted to college. We did this on more than one day of the year. But I think for the big one I did ditch. Is it bad I can’t even remember?
Yummy breakfast, I can’t believe how low cal it is! Especially with the potatoes + cheese. Delicious 🙂
Hannah is such a sweetheart. I need to buy my mom a coffee!
What a sweet daughter 🙂 I love stuff like that! I’m definitely trying your zuchinni egg dish…yum! Yes, I ditched on senior day and don’t regret it one bit 🙂
I had no Mexican food yesterday. Being a California girl, that feels like sacrilege. Maybe I’ll stop by our local place tonight and get some takeout. I *love* Mexican food…I usually go with fajitas at our sit-down restaurant or a burrito or taco plate from our takeout place. I skip the rice–even though it’s yummy–but I can handle the beans and corn tortillas pretty well.
And how sweet is Hannah! I hope my kids turn out as sweet as her, although I don’t know if my pancreas could handle it. 😉
oh my gosh Hannah is such a great student! I can’t believe she has only missed one day! you must be such a proud mom =)
unfortunately I didn’t have mexican food yesterday, but I had nachos on my mind all day!
i love shrimp in mexican food-yum! thank goodness it is thursday 🙂
I could eat mexican food for every meal and never get sick of it!! Yum! Your daughter is so cute and I love that she wrote MOM on your cup!!
How SWEET is your daughter??!! 🙂 Love it!!
You are the Quiche Queen!! I love all these quiche ideas, thanks!! 🙂
I could totally eat mexican every single day and NEVER get sick of it!!!!!!!!
The Broccoli Zucchini Egg Bake looks so yummy! Kudos to Hannah for her attendance record! I certainly skipped on senior skip days and many self-invented junior skip days 🙂
So much yummy Mexican food! I love it! And so sweet of your daughter to bring you that treat & sweet note. We definitely had a senior skip day and I did skip! I was a very good student though, so it wasn’t a huge deal 😉
aweeee #1 mom that is adorable!
yea mexican food just rocks like that hehe
Wow you must be so proud of Hannah! I hope she gets the award!
I think I went to the beach on Senior Ditch Day but we did that often ha
I didn’t have mexican food ayer unless you consider a tuna fish sammie in a Whole Wheat Tortilla lol
YUM – completely delicious day yesterday and I do think I could eat Mexican food every day too!
You are such the proud Mama, I LOVE it – I LOVE that she brought you a Starbuck’s too 🙂
What, no finals!? Lucky girl! I think I missed more days then I went.. haha I’d never win that award! They’d also count 5 tardies as a missed day and I was ALWAYS late!
I didn’t have Mexican food at all yesterday! How boring! haha
Hells yes I skipped on Senior Skip Day! Shoot, I started forging my mom’s signature on excuse notes when I was a freshman! Of course, I used to skip my afternoon classes to go early to the hospital where I was a candystriper, so my delinquency wasn’t all bad. 😉
Mexican or Thai? Always a tough choice for me. I think that, in another life, I was one or the other. Thanks for the delicious-sounding recipe!
I’m assuming that the lovely Hannah is your daughter?
Best,
Bonnie
Yep! 😀
wow! i definitely missed more than one day in HS. the no finals with an A for last semester senior year was a perk i enjoyed too — so nice!!!!! i had NO real mexican food last night, sad! although i eat it often enough to make up for that 🙂
Hannah, you are so nice to your Momma to bring her an iced coffee!!
Great job in school too Hannah!
Biz, I love your breakfast casserole bake, it looks so deluxe!
Yay for mexican food!
Our principal threatened suspension for any senior who skipped on senior skip day. The principal’s son was the one who planned the entire skip day, like his dad was never going to find out. We thought we were so invincible! 😛
I had salsa eggs for brekkie, my steak/bean/corn and tortilla combo for lunch, and tamales for dinner! I’m like you, I would probably never get tired of Mexican food!
I make a breafast like that too that I LOVE! Your shrimp taco meal looks fantastic too! Thanks!
I ate the leftovers from my anniversary dinner. I actually contemplated having a Margarita but had a martini instead 🙂
The Mr. took my nephew to Taco Bell. Does that count?
Hannah is sweet!
Unfortunately, even if we did have straight A’s in high school everyone always had to take the finals…she’s lucky!
Yummy mexican yesterday – I’m with you, could eat it everyday!
Only missed one day?! That’s good. I missed several parts of days. I use to get out of a class to go get my warts on my hands hit with liquid nitrogen. Well little did the school or my parents know I had to have that treatment LONG after it was over 🙂
