I had Mexican food twice yesterday!!  Truth be told, I could have Mexican every day and never get sick of it!

For breakfast yesterday I used up some leftover broccoli, shredded zucchini, diced ham, egg beaters and mozzarella cheese to make another sort of crustless quiche.  I thought this would be 4 servings, but after I entered it into www.calorieking.com, I realized I could eat half for only 338 calories! 😀

Then pour in the egg beaters, 1 ounce of mozzarella cheese on top and salt, pepper and crushed red pepper.

Then bake for 35 minutes at 350.

I loved the bottom layer of potatoes!

Broccoli Zucchini Egg Bake (printer friendly version here)

Makes 2 servings (Each serving: 338 caloires, 11.4 carbs, 41 protein, 13.8 fat and 2.3 fiber)

Ingredients

2 cups Egg beaters
2 ounce ham
3 ounce broccoli
2 ounce zucchini
1 ounce mozzarella cheese
2/3 cup cooked potato

Directions

  1. Shred zucchini and squeeze out water. Layer 2/3 cup canned potatoes in a square pan – chop broccoli and sprinkle over top. Add zucchini and diced ham. Pour two cups of Egg Beaters over top and finish off with 1 ounce mozzarella cheese.

Bake at 375 for 35 minutes, or until eggs are set.

My office ordered from a nearby Mexican restaurant for lunch.  I picked the chicken fajitas with corn tortillas.  I ended up eating:  3-five inch corn tortillas, about 4 ounces chicken, green pepper, 1/2 cup refried beans, 1/4 cup Spanish rice, 1 ounce of tortilla chips and a tablespoon of sour cream.

When I got back to my desk, I entered my lunch and it comes in at a whopping 717 calories, 85 carbs, 57 protein, 15.8 fat and 13.1 fiber! Thank goodness my breakfast wasn’t high in calories! 😀

I had a surprise visitor yesterday afternoon!

Hannah came to visit!  She didn’t have to be to work until 5:15 so she stopped by to say hi and brought me a skinny vanilla iced coffee! 😀

It’s hard to believe that in 20 days she’ll be done with school!  Since she has straight A’s she doesn’t need to take any finals.  And she may get an award for best attendance in high school! She only missed one day her freshman year – she’s even contemplating not ditching on senior ditch day because she wants that award!  Did you have senior ditch day when you went to high school – and did you??!!

Dinner was more in my control – I ended up making shrimp tacos – while there are a lot of recipes for chipotle marinated shrimp I would have liked to try, I had to consider the spice factor for Tony.  In the end I went simple and just cooked the shrimp in taco seasoning with a bit of water.

This dinner was so easy to put together – maybe 20 minutes total?

My plate: 1 low carb tortilla, 3 shrimp, jalapeno, 1/2 ounce mozzarella cheese, 1 tablespoon nacho cheese, lettuce, cucumbers, 1/2 ounce of tortilla chips and 1/2 cup pinto beans.

Delicious!! Dinner comes in at 462 calories, 45 carbs, 32 protein, 16.7 fat and 13.2 fiber
