Today was a productive day! I have to mention the real reason I took today off was because Tony was going to have a root canal and I wanted to be there for moral support. Sadly, I was so busy at work yesterday, that I failed to call the nurse and ask about what type of pain medication, what to expect, etc., so unfortunately he was a bit more apprehensive than needed to be – so sorry Tony!
The good news is that he is in less pain then he was before he went in, which is great! 😀
Before we left for the dentist, I made a Kidz size flat out sammie. I don’t like the texture of flat outs on their own, but when I Pam fry them, they crisp up nicely. My breakfast: 2 small flat outs (50 calories each!) 1 egg, 1/4 cup egg white, 2 pieces of bacon, and 1/2 ounce of cheese.
I started laundry when we got back and have washed, dried and folded four loads! I waited for Hannah to come home and we ran some errands before my afternoon flu shot. I am glad to say that I went to Sam’s Club so we have plenty of paper towels, Hannah found disposable coffee mugs so she can break her habit of buying coffee in the morning on the way to school – 50 cups for $9 isn’t too bad! You could spend that in just three cups of Starbuck’s coffee!
It wasn’t until we were at the check out lane that I realized I hadn’t eaten lunch yet! So I threw caution to the wind and ended up getting the hot dog combo – a Nathan’s hot dog, with 32 ounce drink for $1.50 – can’t beat that! I didn’t have my camera with me, but this hot dog was so good – crisp bite to the hot dog and a steamed bun. I loaded it up with tons of mustard – that lone hot dog though set me back: 417 calories, 19 fat, 14 protein, 42 carbs and .8 fiber. It hit the spot though!
Then on to the grocery store – I did a great shop – only spent $70! And I have lots of new recipes to try this week:
- Spicy Thai Chicken Noodle Soup (for my lunch tomorrow – can’t wait to share this simple spicy recipe tomorrow!)
- Hummus made from chickpea flour (I am going to try to recreate the veggie sandwich from Tropical smoothie)
- Classic comfort casserole – Chicken and Biscuits
- A new scalloped potato recipe
I found these peppers:
And Hannah and I decided to stop by DQ to get a Peanut Buster Parfait for Tony – its one of his favorites! I could feel the hot chocolate sauce and it was all I could do to not take a few bites – but I didn’t!
I decided chili would be a good idea – not much chewing involved! I stumbled upon another chili recipe, and with a few alterations, followed it pretty closely – obviously I left out the onions!
- 1 pound ground beef
- 1 pound ground pork
- 4 cloves garlic, chopped
- 1/4 cup chili powder
- 1/2 tsp. cayenne
- 1/2 tsp. salt
- cracked pepper
- 1 tsp. cumin
- 1 can diced tomatoes (her recipe called for paste, but I didn’t have any)
- 2 cans of light kidney beans, rinsed and drained
- 1 cup beef broth
- 1/2 can of beer
- 1/2 tsp. cocoa powder
This made 10 cups – each one cup serving: 322 calories, 22 fat, 10 carbs, 2.2 fiber and 19.3 protein
I sautéed my garlic for about 3 minutes, until fragrant, then added the tomatoes and beef broth. Since I don’t like chunks of tomatoes, I used my stick blender to puree and then poured out this mixture. I then added my meat to the pot and browned, removing most of the fat. Then threw everything else into the pool.
My plate: 1/2 cup cooked elbow macaroni, 1 cup chili, 1 ounce of shredded cheese ends, and sliced banana peppers. This was a very generous portion too!
Since Tony and Hannah won’t eat leftovers, I ended up adding an additional 1 tablespoon of cayenne pepper to the balance, and a generous sprinkling of Tabasco! I plan on making stuffed zucchini with the leftovers for one of my lunches this week.
Stats for the Day:
- 1264 calories
- 66 fat
- 67 protein
- 96 carbs
- 12.4 fiber
- sadly 47% of my calories were from fat 🙁
- no exercise 🙁
I am contemplating skipping tomorrows weigh in because my week was not a normal one – the last weigh in is October 17 so I think I’ll wait until then and hopefully keep my 7 pound weight loss goal! 😀
Still need to catch up on my blog reading – and tonight is Biggest Loser! I usually wait until 9:00 to watch it from the DVR – I can usually get through a show in about 45 minutes that way.
Tomorrow is also the last day to enter my Cabot Cheese Giveaway – need more cheese recipes please! You can submit until midnight tomorrow night and a winner will be chose on Thursday nights post. Night all! 😀
great idea with the flatout. i’ve had the same problem, so i’m going to try it your way next time. i love the chili, delicious!
The chili looks gorgeous! I especially like your plate with macaroni & banana peppers!
Hey there! I wanted to send you an email but I can’t find your email address. I’ve started a service project for the holidays to help feed hungry familes. I’d love for you to check it out when you get a chance!!! Hope your having a great day!! http://www.nono2yoyo.com/project-feed-mepost
Its breakfast time and your picture is making me want that instead of my cereal!! 🙁
Yes madame the mango chutney cheddar cheese sandwich is my entry 🙂 And I assure you it’s DELICIOUS! 😀
That peanut parfait from DQ looks good – I love the little whole peanuts. I’m use to just seeing the little crushed up bits on ice creams. Glad to hear that Tony is feeling better. Root canal work can be really painful!

i love chili with pasta or rice 🙂 so good!
Aw, sorry to hear about the dental work – glad he’s feeling better!!
I’ve never seen kid’s flatouts…I think I would like them! And I think they would be totally perfect for kiddos!
Glad Tony is doing better, I hate the dentist@!
Your breakfast looks great! I’m glad Tony is doing better! The dentist is no fun…
Have a great day!
I thought i was the only one who thought Flat Out’s were a little weird and chewy 😀 WOW bravo for resisting the lure of DQ!
Aw, you are so sweet to go with Tony. I am so scared of the dentist 🙁
BL was okay tonight… I don’t know. I’m not liking this season as much as previous ones.
I’d say it’s a great idea to skip the weighing if you know it will dampen your mood. You have all these years to remedy a bit of weight gain, but that day to enjoy will never come back!
Wow, chili just abt sounds PERFECT right now…it’s getting chilly here in LA, too…
I don’t like the Flatouts “raw” either. 🙂 I toast mine, then use them as pizza crusts.
I have had the flat out bread, we got ours at wal-mart and it came in regular, italian herb and whole wheat.
I haven’t seen the kid flat outs either! They crisp up awesome under the broiler too- just watch them cause they burn quick as well ;). You’re such a sweet nurse
Spot on. I use La Tortilla for veggie wraps, but for wraps that require grilling, I use flat out because it gets all crispy and good. I use flat outs to make “crack wraps” (hummus and cheese inside and grill).
That chili looks awesome!! Can’t wait for your Thai noodle soup recipe either! Smart ideas with those flat out wraps – I get so many ideas from you! 🙂
I have never seen those Kids flat outs, they sound kinda interesting!
J just saw the picture of your chili and I’m surprised that he didn’t get drool all over my desk.
