FOOTBALL! It’s official, I am a football widow beginning tonight. So I am sure if I have any regular readers, you know I think about food, read food magazines, dream of what I am going to make for dinner after I’ve eaten lunch – well I think that Tony loves football more than I love cooking! Now that’s saying a lot!
He loves it though – I get to come up with football food, so it’s a win-win! 😀
Breakfast was a pepper and egg sammie and a peanut butter and apple sammie.
- 1 high fiber english muffin
- 1 egg
- 1 small red pepper (the mini ones)
- 1/2 banana pepper (extra spicy!)
- 1 slice cooked bacon
- 1 ounce of 75% reduced fat Cabot cheddar cheese (I really need to be their spokesperson!)
- 1 teaspoon peanut butter
- 1/2 large Fuji apple
I basically call my stir fry I made from lunch a “kitchen sink” stirfry. It’s basically all the veggies I had in the house! Plus 3 ounces tofu and 1 package of Yaki Soba Noodles.
I ate every bite too! It took me over 45 minutes to eat it too!
I was digging through my freezer and remembered that I had this pork tenderloin in the fridge. I wondered why I hadn’t made it before and then I saw the word: peppercorn! Tony hates peppercorns – I probably saw “garlic” and threw it in my cart. It worked out though because I had two pork chops for Tony and Hannah and I ate the tenderloin – it is actually one type of meat Hannah will eat – its not to big and she likes the well done ends!
Because the tenderloin and pork chops weren’t that big, I made the mistake of putting WAY too much coals in the grill – can you see that my meat is done and the cools are still kicking! I had 4 small red potatoes. I nuked them in the microwave, let them cool a couple minutes, then cut them in half and drizzled olive oil and salt and pepper. They only took about 3 minutes, flesh side down. I loved them because the flesh side got crispy, but the inside of the potato was so fluffy and tender. I also made a low fat broccoli cheese side dish – and while good, it isn’t great, so I need to tweak it some more!
And I may have had one of these with dinner!
My friend Cassie at work tried to make a copy cat recipe of Panera Bread’s Sourdough Bread. The recipe she found was a three day process and when she was finally ready to bake them, she took them out of the oven and they loaves were dense and so heavy. She wondered where she went wrong, and I had no clue because I’ve never made sourdough bread before. Have any of you made sourdough bread before? So she brought me the starter and my dough is rising as we speak. Fingers crossed it turns out! It looks like its alive!

I’ve tried making sourdough bread from scratch before, without the yeast…well, epic failure. I don’t even want to relieve it, it was horrible!
Oh, and I can’t wait to receive your package…you guys are TOO kind! My roommate is seething with jealousy though. But I do share, tee hee! >.<

i wasn’t a football fan until a couple yrs back when my hockey team canucks got knocked out the playoffs. i just started to watch football to kinda fill up my unfinished sport momentum, haha!

ohhh i had a bud light with lime once.. it was ok.. but i am not a beer drinker- so i dont know! lol
i am a total xbox, football, baseball, and Law and Order, and… need i go on? Widow.. lol i dont mind the sports or law and order though, because i think the kids become orphans when those are on haha!!
Gotta squeeze that beer in there. Yay for football and beer!

I’ve never made sour dough bread before, but it’s one of my favorite breads to eat!! i absolutely love it. The first time I ate it I was so confused…but then I realized YUM, it was delicious!
The lime Bud light sounds interesting. I’ve never tried it but I hear it’s pretty good! Lime goes well with so much, think..lime tortilla chips!
I don’t watch football at all. Ever. Except for the superbowl. But a lot of my classmates seem to be into it so I can’t wait to cook some football food. I’m dreaming of chili and guacamole…

My husband plays fantasy football with a group of guys (well, there’s 2 gals that play, too), so I sympathize. You’re right – football food is fun to prepare (and eat)!
Crispy on the outside and soft in the inside sounds really good for the potatoes. That is how I like my sweet potato fries too.
My husband LOVES football, too, but only college, so he’s “gone” (i.e.–in front of the tv) on Saturdays and still a normal human on Sundays! 😉
That is a neat way of cooking the potatoes – I’m going to have to try it!

Where do you get your soba noodles? I’ve been looking everywhere for them and only found these REALLY expensive ones at an organic food store. Too pricey for me.

We put way too many coals when we cooked the chicken under the brick. I was paranoid they’d die down b/c I needed them hot for like 40 minutes, but I overdid it!
When we pulled the chicken and veggies off they were still burning beautifully. We were saying that it seemed like such a shame, we wished we had more to grill. My dad said to see if the neighbors wanted to come grill, haha but we’re not really friendly w/ any of them so that invite would be a little weird!!! 🙂
