I almost had another disaster for pizza party Friday! You’ll see what I mean in a minute!
Breakfast was not photographed, because my battery was charging – it was my classic egg sammie! Since I didn’t grocery shop and there were slim pickins, I did not bring a lunch for work. I decided on Jimmy John’s – I got the Vito on whole wheat thinking that was a pretty good choice. The bread was huge! Luckily I checked the calories after I ate half – the whole sandwich would have been 700 calories!
Lunch with the chips comes in at 490 calories, 23 fat, 37 protein, 50 carbs and 2.3 fiber.
So I made my whole wheat artisan dough last week, and although they say it can last in the fridge for two weeks, I am not quite convinced! I’ve made probably 20,000 pizzas in my life (both at a restaurant and at my house!) and have never run into this problem.
I like a crispy crust, so I usually cook the dough for at least 5 minutes until it can shake off the pan, then add my toppings and slide it onto my oven rack. This was not moving!!
On to plan B! My no rise pizza crust. So simple!
- 2 cups flour
- 1 package yeast (2 1/4 tsp. of you have loose yeast)
- 1 tablespoon salt
- 1 cup warm water
Mix the yeast and the water for 5 minutes, until it starts to puff. Mix flour and salt. Combine with a wooden spoon. Then I usually dump it on my counter and add flour until everything holds together. It’s good to go, no rising required!
Hannah wanted to know why her half didn’t have yellow pepper – I had to tell her that these were spicy peppers – so good!
Truth be told, I took this out before it got too crispy. Hannah and Joe both like a chewy crust (I know, where did I go wrong!). I cut the pizza in half, then returned my half to the bottom of the oven to crisp up nicely.
Going into dinner I had only had 788 calories, so I had about 660 to “spend.” Not going to sweat the details on this one – but it was so delicious!
So I think we pretty much cleared up a bunch of stuff on our DVR! Seriously, I don’t know how I grew up with only 7 channels! 2, 5, 7, 9, 11, 32 and 50! And to think that I now have 500+ channels and nothing is on!
We caught up on Hell’s Kitchen – I have to seriously wonder if any of these people have ever worked in a restaurant – they kill me! Can’t sear a scallop? Can’t make two servings of mashed potatoes?!!
We watchd a Diners, Drive-Ins and Dives – I may have to recreate one dish we saw – it was a potato encrusted salmon – and while I don’t like salmon, I may substitute with baramundi.
And we watched Jon & Kate plus 8. Both still wearing their wedding rings (contractual obligation?). The boys went with Kate on a ship while Jon went with the older twins for rock climbing and go-cart racing. My favorite of all is Aiden – his cute little glasses! I just want to scoop him up and give him kisses!
Hope everyone had a great Friday. We have the farm tomorrow and hopefully get more tomatoes – its canning season and I need more produce! I hope to make my homemade pickled jalapenos this weekend along with my death by chocolate zucchini muffins that will be healthy!

I love Jimmy John’s sandwiches – I get the “unwich” style, which is wrapped in a large lettuce leaf (no bread). Not quite the same…but at least I’m getting the taste!

Hell’s Kitchen is so confusing. I think it’s so strange how they make one person out to be SO good, but then on the next episode they can’t sear a scallop (come on!) or they overcook a piece of pork. I don’t know whether to believe it and I’m not sure how much they cut out…either way it’s fun to watch. Robert needs to leave the show, and get some serious help. Two heart attacks in a row? HELLO!! hint hint, loose some weight, fast.

My husband says the same about Hell’s Kitchen, I think it’s because they are rushed and then they screw up.

nice work on saving the PPF!! Soo funny about the cable, because we JUST got cable and dvr for this past christmas- my whole life I’ve had just the 7 channels!! My friends made fun of me, I would whine to my mom about how deprived I was 😀 Ha and now I can’t tear her away from it, she records eevverrrything!

I LOVE Jimmy John’s! I’m a little obsessive though. I check the calories of my sandwich before I order it. It’s one of those habits I’m supposed to be breaking. Thanks for stopping by my blog!

The Hell’s Kitchen thing bugs me a bit b/c I love Gordon Ramsey, but I think they’re trying too hard to make ea. season tons of screaming. So they go find these random ppl (daycare chef?? buffet server????) that have just dabbled in the food industry and put them on the show. Not too sound too snobby, but really – they have no right to be vying for such an important job when they are so inexperienced and undereducated in taht field. The positions they’re being awarded should first go to accredited chefs and people! Instead they go from – can’t cook a steak or a scallop to — hey I’m a head chef making $$$!
Haven’t watched Jon and Kate in a long while — but I always loved Aiden the best, too!
