Lately I’ve liked the combination of mixing flavors and textures, and this grilled cheese certainly delivers in that category! I picked up this bread, which I am loving:
- two slices healthy life flax bread (really nutty!)
- 2 ounces deli smoked turkey breast
- 1 ounce pepper jack cheese
- 1/2 anjou pear, sliced thin
- handful of baby spinach
I used Smart Balance oil – about 1 tsp. to grill my sammie. I could have let the cheese melt a bit more, but it was still really good!
I had one serving of my cauliflower soup left, and decided to steam some broccoli to add. We have all of our leftovers from last night brought in, and I grabbed a generous tablespoon of goat cheese to round out my soup – the goat cheese was just the thing this soup needed – of course, I added more crushed red pepper too!
So delicious! Lunch comes in at 484 calories, 20 fat, 25 protein, 47 carbs and 9.5 fiber! š
I was going to do my treadmill sprints today, but my friend Cassie loaned me her Kathy Smith dvd – lifting weights to lose weight. I loved it! Although she “howls” quite a bit, so that was annoying!
- 20 minutes of upper body
- 20 minutes of lower body (lots of lunges)
- 10 minute abs
I mostly felt the hamstrings in the lower body workout – but it felt great!
Afternoon break is over – come on back for dinner: Sirloin Tip Roast on the Grill with Fresh Green Beans Almondine!

Wow! That all looked really amazing. I haven’t tried the Kathy Smith DVD’s. It sounds pretty intense.
