Wow, after this week, I am SO glad its Friday! Although I like to be busy, I don’t like being totally busy day after day after day! Oh well. one more week of being in the weeds and then I think things will go back to steady busy!
I got up to work out, but I was too sore! I had like this charlie horse in my right calf that just wouldn’t go away. So I made coffee and was only able to catch up on a few of your blogs!
Breakfast was 1/2 Thomas english muffin, 1 egg, 1 ounce cheese and 1 delicious diced pear!
Breakfast comes in at: 209 calories, 5 fat, 9 protein, 34 carbs and 8 fiber 😀
I basically worked through lunch, I had a chance to heat it up at least! It was a leftover taco from dinner last night:
- 1 low carb wrap (10 grams of fiber and only 50 calories!)
- 2 ounce taco beef
- 2 ounce chicken breast
- 1 ounce cheddar cheese
- 1 side salad with Annie’s dressing
- 2 kiwi
These kiwi were perfect!! Lunch comes in at 487 calories, 23 fat, 41 protein, 34 carbs and 11 fiber.
So while I didn’t get to work out at lunch, I got everything done I needed to at 4:40 so I called it a day. I ended up going down to the gym and did a 30 minute kick boxing dvd! I am so lucky to have a gym in my office building – it only costs $100 a year!

So Tony found a recipe for a cauliflower crust – we were both intrigued! Update: the sheet pizza below is two servings of the recipe below!
- 1 cup pureed cooked cauliflower (I just pulsed mine in my food processor
- 1 egg
- 1 cup mozzarella cheese
- 1 tsp. Italian seasoning
While I drank a beer, Hannah chopped up her onions:
And Tony sauteed peppers and whole garlic:
I decided to spread it on a cookie sheet and thought foil sprayed would Pam would make it easy to take out. Here’s how it looks after baked at 450 for 18 minutes.
Then top with toppings and broil to melt the cheese – you have to make sure all your ingredients (i.e. sausage) is cooked.
Then my worst nightmare! Everything stuck!! We all agreed we liked the flavor – two things – NO FOIL and TOO THIN!
This is my scraped plate above – mixed with dollops of Tony’s pasta sauce he made earlier – tomatoes were only .39 cents a pound!
So I had enough cauliflower to make one more small pizza – this one was much better. I heated the pan and made it a bit thicker.
It actually got crispier the longer it cooled! And it was strong enough to hold like a piece of pizza:
So we are close to perfecting this crust – I think South Beach Pizza Party Friday has been born!
I am so looking forward to getting up tomorrow, drinking coffee and catching up with everyone!! Hope everyone had a less hectic week than I did!
Stats for the Day:
- before dinner I had close to 700 calories going into dinner, so I am not going to worry about the calories of this pizza!
- 30 minutes kick boxing
I hope to go to the gym tomorrow for a long treadmill or elliptical so I can finish my book – I am loving The Homemade Life! I think this may be my August 1st Giveaway!!

i love that you found a way to make pizza without flour 🙂 i would have done exactly the same thing!!! i bet next week you will figure out the perfect ratio so you can make it every friday!

I’ve seen a recipe before for that , but have never tried it before.
Do you think putting a little oil on the cookie sheet first would help not make it stick?

That cauliflower crust looks very creative. So is it kind of like a hash brown? I love the crispy bits.
You are quite lucky to have a gym in your office, and to get such a great deal on it. So convenient, so there’s little excuse to not use the place 🙂
