It was raining outside, so that meant the grills were out of play. Well, I could have used the gas grill, but I would have been really wet! I love cooking with Tony, but our kitchen is so tiny for the two of us. We managed to tag team to put this meal together in about 20 minutes from beginning to end – not too bad!
I actually adapted several recipes to come up with my saffron sauce – scallops are delicate and I didn’t want the sauce to overpower them.
Saffron Sauce for Scallops
- 1/4 cup grated parmesan cheese
- 1 cup fat free half and half
- 4 tsp. corn starch
- 1 teaspoon lemon (I used 1 tablespoon and it was a bit much – but Tony rescued it with additional salt and pepper! ) 😀
- cracked pepper to taste
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1 pinch of saffron threads
Melt butter and garlic together and cook for a few minutes, just until the garlic starts to brown. In a separate dish, combine half and half with corn starch and mix well. Add to garlic mixture and stir, about 3-4 minutes until thickened. Add parmesan cheese and saffron and remove from heat. It just needs 1 minute prior to plating to heat back up again.
I should say that I first put water to boil for my pasta – I bought a low carb pasta at my farmers market and it was suprisingly really good. You’ll love the stats though – 4 ounces cooked fettucine is only 70 calories, 12 carbs and 9 grams of fiber!

Tony was in charge of the steak – a screaming hot cast iron skillet and salt and pepper to make a fantastic crust. It was so smokey I was surprised the fire alarm didn’t go off!
So my plate was 5 ounces of steak (only ate 4 because one side was all grissle and I gave that to the dog), 4 ounces cooked low carb pasta, 1/4 cup saffron sauce and 3 ounces of seared scallops:

This week is going by fast, I can’t believe tomorrow is Thursday already! And I miss Hannah – she doesn’t get a good cell signal where she is, so we’ve only texted a couple times – she is having a great time. But I am noticing that her cleaning skills have been missed while she’s been gone! Usually when she has a day off I come home to folded laundry, empty dishwasher and clean kitchen – you never appreciate what you have until its gone – thanks Hannah when you read this!
Off to snuggle with Tony – last time I checked the White Sox were up 4-0! 😀 See you tomorrow!
