I had a taste for pancakes today, and since Tony and I are going to start South Beach tomorrow, I figured it was now or never!
Fluffy Pancakes
- 2 cups flour
- 2 tablespoons baking powder
- 3 tablespoons sugar
- 1 teaspoon salt
- 1 3/4 cup skim milk
- 2 eggs, beat separatedly before ading to mixture
- 1/4 cup (4 tablespoons) melted butter
Mix dry ingredients first. Mix wet ingredients. Slowly add the wet mixture to the dry mixture until well combined. Let sit at least 10 minutes (or more). This let’s the baking powder do it its thing and makes for very fluffy pancakes.
I heated my stove to 225 degrees and once the pancakes were done, put them on a cookie sheet to stay warm until the whole batch was cooked. I had two pancakes, sf syrup and 2 ounces of sausage.
I am trying to come up with a menu plan for our first 7 days of Phase I of the plan. This includes a list of things that cannot be eaten:
- fatty cuts of meat
- dark meat
- carrots
- corn
- peas
- ALL STARCHES!
- bread
- potatoes
- cereal
- pasta
- rice
- ALL FRUIT!
- Whole Milk
- ALL ALCOHOL!
- ALL SWEETS!
I think I have breakfast figured out – ham, spinach, zucchini egg cups. It may be a lot of repetitive eating this week, we’ll see!
Off to do some more research – pretty sure I am going to have chili dogs for lunch to watch the Sox beat the Cubs and it will be our fairwell to bread, so I already have my pizza dough rising as we speak! 😀

Who doesn’t like pancakes? Seriously. Who?
I have been on the SBD for almost a year now, and I love it. I don’t really feel like I am giving up very much. Sure, there are times I would love to have white bread, but whole grain bread is allowed on phase 2. I think it is a great lifestyle, especially for diabetics. I second the earlier comment to head to Kalyn’s Kitchen.

That’s why I hate diets!!! Look at all that food you have to give up!! I would have no idea what to eat. I wish you luck!

The South Beach diet is going to be such a change from how you normally eat – I’m crossing my fingers for you that you (and Tony) have an easy transition into it!
