Normally I do my giveaways on the 1st of the month – but given that I just clicked over 100,000 pageviews yesterday, I figured it was a good occassion to do a giveaway!

Broccoli and Cheddar Cheese Bread Pudding
- 3 ounces stale french bread
- 3 ounces cooked chopped broccoli
- 1 cup egg white
- 1 cup skim milk
- 2 ounces cheddar cheese
- crushed red pepper to taste
- salt and pepper to taste
The inspiration for my breakfast was stale bread – I am notorious for throwing out gobs of bread before they are used – I just never think to throw them in my freezer!
I just mixed everything together and then when I put it in my cast iron skillet – I let it sit for 10 minutes so the eggs and milk got absorbed in all the bread – then baked for 40 minutes at 350 degrees.
I am also going to throw in some other goodies in the giveaway, maybe some red quinoa and a few other things 😀

One thing that has helped me in my weight loss was simply drinking more water. Often, I would just eat when I wasn´t really hungry, but THIRSTY. I also began adding more bulky and low cal foods to my diet such as squash (love it!), salad (of course), and any fruits in season!..drinking more water and eating more fresh produce has also improved my skin.
Anyway, awesome giveaway! I actually had a non digital scale and it was very helpful when it did work! I can imagine how nice a digital one is. =)

I would say a good tool for me is my crappy $5 wal-mart pedometer. I thought it was a real hunk of junk when I bought it but now I wear it every day and it really pushes me to walk a little farther in everyday tasks just to get the count up. One day I’ll break down and buy an even better one, then sky’s the limit!

My easiest weight loss tool is Excel 😉 it’s always on my desk top, easy to access, and does all the math for me!
My best tool is always eating breakfast and making sure I have some protein. When I eat an egg white sandwich, I can go until lunch without even a snack. Amazing!! ( I’m diabetic too, but I’m on Byetta)
Um…I’m on weight gain. And I love my spatula because it scraps up every last bit from the pan/bowl!!
And my…that bread pudding looks freaking awesome! I love all the cheese action going in there!
That scale is AWESOME. lol. My diet challange right know is stress. I have had a REALLY bad day at work and all I want ot do it eat chocolate and drink beer.

My husband and I have a scale, but it is terrible! I am really in the market for a new one!
My biggest fitness change happened when my husband and I committed to doing a workout program together (P90X). The fact that we do it together really keeps us both motivated. When I dont feel like doing it, he does, and therefore gets my behind off the couch, and vice versa.
My other fitness strategy is taking pictures of myself. My husband and I both took pictures of ourselves in bathing suits at the start of our workout plan, and have been taking one every 30 days since. It is really nice to be able to look back at all the pictures and see the progress we have made. Sometimes it doesnt feel like you are getting anywhere, but then you see the pictures and realize how far you have really come.
These things have been really working for us! I am a 30 year old mom of 2, and look better than I did before I had kids! It has been a very hard journey, but commitment really pays off!

I have a couple tools that help me maintain and hopefully eventually loose some weight, the first of which is major portion control – I have to measure out my portions, or else I will def go overboard – unfortunately I only use measuring cups now.
the other thing I do is, when I can walk, I walk my dog 2-3 times a day =)

i don’t really have any tools for weight loss but my husband keeps a log of what he eats and he counts all of his calories every day.
I just try to walk every day, and do yoga every day. Even if it’s just for a little bit. I think that making sure you do something active every day is key 🙂
That scale looks great… I don’t have one but it’s on my list of things to buy.
I would love to win that scale – oftentimes I’ve wondered about the weight of some food item when I can’t easily measure it in a cup.
My tools for weight loss are measuring cups and spoons, and working out. This has made a world of difference this go round.

Hmmm, as for a weight loss/maintaining tool…keeping my fridge/freezer/cupboard stocked with foods that are tasty & nutritious. If you have all the goods you need there to create good food, you won’t need to rush out and get take out so often.
My tools:
– Food scale and measuring cups (using plate method when I can’t measure)
– Having a daily plan & written health log
– Exercise
I know those work, because this week I only used the third item (exercise). I was at a company offsite and there was lots of good food. Mostly healthy, and there were lots of lower-carb choices (except for dessert), but rather caloric. I ended up eating more than usual (because I was skipping dessert-yeah, I know, makes a lot of sense, huh?) and gaining a few pounds.

To maintain my weight I try to eat half the plate of veggies and 1/4 each of a protein and grain. I also serve our plates at the stovetop/counter, instead of putting big bowls in front of us. This elimnates seconds 99% of the time. If it’s sitting right in front of me, I don’t hesitate to grab one more spoonful, but out of sight out of mind!
Love the bread pudding! I’ve been throwing ours in the freezer too, but even that’s getting a little out of hand. I really wish stores sold half-loaves of bread.
I have always wanted a food scale! What I do to maintain my weight is work out 5-6 days a week. What an awesome giveaway!

I think it helps to write stuff down, because you forget what you ate and then go over your calories for the day too easily!

what a great giveaway! this is one purchase i keep meaning to make but then the money ends up going toward something else. one of my tools for maintaining is trying to bulk up meals with veggies so i dont continue to snack after eating. an extra salad or bowl of broccoli sometimes really is enough to do the trick!

To maintain/lose weight I try to keep my dinner time snacking in control by having a big heart lunch and afternoon snack. Squash, I’ve found is especially filling and delicious :). Thanks for the giveaway!
My personal trainer is 2 years old, and feisty. That is my most effective weight-loss tool.
Question – can you use metal spatulas/knives with cast-iron pans? I recently got a new LARGE cast-iron skillet, and have been afraid to touch it, much less use it…I’m so afraid of scratching, warping, or rusting it.
Cassie – the first thing you need to do is season your skillet. Wash with warm water (never soap!) and let dry completely.
Using vegetable or canola oil (not olive oil) coat the whole thing liberally – handle and all. Cook in a 350 degree oven for one hour – let cool in the oven.
You may have to do this once a month until it becomes non-stick – I’ve been known to use Pam too. You can use a metal spatula, but I would not recommend a knife because it will cut through the seasoning part.
If you have a hard time cleaning it – sprinkle liberally with sea salt and scrub with a paper towel. 😀
