I had the idea of making my avocado salsa to go over our grilled steak tonight, but my store didn’t have any tomatillos! So simple grilled steak it is!
Since Hannah doesn’t like red meat, I made her homemade mac n cheese with broccoli. I love mac n cheese!
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups skim milk
- 1 cup cheese of choice
- salt and pepper to taste
I melt the butter then add the flour and stir to make a paste – let it cook like this for 1 minute. Slowly add the two cups of milk to make a thick white sauce – add cheese and stir until melted. Hannah loves rotini so that’s what I made. While the pasta was boiling, I put a strainer on top of the pot and put a lid on the strainer to steam the broccoli:
Our store usually has a package called “cheese ends” which are the ends of the deli cheese – we can buy a package of cheese ends for about $2. I sometimes just shred it all in my food processor to use in various dishes, but since I knew I was melting the cheese in my sauce, it just got a quick chop:
I hit the jackpot twice at the store earlier this week – I got a 1.25 pound ribeye for $4.48 and a 1.1 pound bone-in New York Strip for $4.25!
I let the steaks come to room temperature – about 30 minutes before putting them on the grill.
My plate: 2.5 ounces of new york strip, 2.5 ounces of ribeye (fat removed!) and 4 ounces of the mac n cheese:

I can’t believe tomorrow is Thursday already! Hannah leaves for vacation in 10 days – she’s going to Virginia with my mom for 9 days – lots of river floating and good eats are her plan for vacation. Tony and I will pretend to be empty nesters while she’s gone! 😀

Virginia will be so fun! We went on vacation there once and did a river-float tour for two hours on inner tubes. Such a cool experience!
