The other day I found a recipe for Flax Seed/Almond crusted french toast and it sounded amazing! Well, this being Grocery Store Challenge week, I discovered I was out of flax seed!
So this morning I was looking in my pantry and found I had 1/2 a bag of fruit and nut granola – maybe that would work?
I used 2 slices whole wheat white Sara Lee bread, 1/2 cup egg beaters (1/4 cup for each slice) and 1 ounce of granola. Because I let the bread soak in the egg beaters, the granola stuck really well – even during the flip!
So breakfast comes in at 407 calories, 15 grams of fat and 41 grams of carbs. I loved the crunchy bites of the granola!! Let’s see how long this will keep me full too!
My plan is to do another Jillian circuit at lunch – hopefully by this weekend my quads will stop hurting!!

I saw your comment on my blog- give Indian a try if you are not afraid to burn your insides with spice! They have a lot of veggie options…and serve food with forks, so you should be good!
French Toast & bacon is one of my favourite combinations. And one of my fave “breakfast for dinner” meals as well 😀
