I was going to run a couple of errands at lunch, but decided to stay in! Lunch today was delicious, but first, I restocked my “pantry” at work. I was out of crushed red peppers, Pam spray and Italian seasoning. I kind of just “claimed” this cabinet next to the oven!
Spaghetti Squash for lunch!!
- 12 ounces cooked spaghetti squash
- 1/2 cup marinara sauce
- 1 ounce diced salami (not sure if you can see it!)
- 1.5 cups baby spinach
- 3 ounces cucumber
- 2 ounces carrot
- 2 tablespoons Annie’s artichoke and Parmesan dressing (so good!)
So filling and good! Love that I have a half hour of lunch left to catch up on my blog reading!! Come back tonight for Chicken Saltimbocca and Twice Baked Potatoes!

that’s some beautiful looking squash! you’re lucky to have such a well-stocked pantry at work–gotta have those spices! have you ever tried tony chachere’s? i knew a few people that loved it so much that they swore it would taste good even on ice cream, haha

Sorry to hear about all of your rain…I would have rather woken up to that then the ground being covered in snow and it still snowing HUGE flakes. Great looking meal as always!!
Haven’t had spaghetti squash in a while but that stuff is so tasty. It looks pretty nasty our that window… good thing you restocked on the crushed red pepper though! I would be so sad to run out of it.

OH man how much do i agree with you on that Top Chef episode last night. GRRRRRRRRRRRRRRRRRRR poor girl, she really did compete with so much love and so much heart. *sigh* At least cocky Stefan didn’t win right??
I’m impressed that you have a shelf to claim in the pantry at work. hahaha none over here where I work, but the entire pantry here is up for grabs…which is super dangerous!
