My soup could not be simpler today. I didn’t realize my chicken breasts for dinner last night were bone in, so I ended up cooking the carcasses in 2 cans of chicken broth. Once cooled I put everything in a container and left it until this morning.
I ended picking off 2 ounces of chicken breast, I had 4 ounces of cooked egg noodles leftover, then added 1 carrot that I nuked in the microwave. Seasoned with Italian seasoning, crushed red pepper and salt and pepper and I am good to go!
Then I had bagged salad mixed that I kicked up with an English cucumber, diced red pepper, a sprinkling of sharp cheddar cheese 😀 and light Italian dressing.

I worked out today too! Okay, gotta type fast because my lunch break is almost over! I did 35 on the elliptical and 5 minutes of abs. I coughed a little, but not too bad!
