I had about 1/4 cup of blueberries leftover and found this recipe on www.recipezaar.com to see what kind of pancake I could come up with. A couple tweaks later, this is the recipe I made for Hannah:
- 1/3 cup oats
- 1/4 blueberries
- 2 tablespoons skim milk
- 1 tablespoon flour
- 1 tablespoon water
- 1/4 tsp. baking powder
- sugar free syrup
I on the otherhand am happy that its grapefruit season! I got 7 of them for $1.00!
My breakfast: 1 grapefruit, 1 slice peasant bread with a teaspoon of 50/50 smart balance and 1 Pam fried egg with Tabasco.
Spent about 1/2 straightening up now I definitely need to shower before my mom gets here. I hope she likes what I have planned for dinner!
- ham and fontina cheese stuffed chicken breasts
- twice baked potatoes
- oven roasted asparagus
- peasant garlic bread
