I got home late Saturday night from L.A., then went to my friends house on Sunday for the Pumpkin Fest Parade. By the time I got home, the thought of going to the store and going grocery shopping was the furthest thing on my mind.
Luckily with a stocked pantry and freezer, I can almost always come up with some sort of soup to meal plan for my lunches.
Ingredients 🌀
1 pound ground turkey
1 tablespoon chili powder
1 tablespoon taco seasoning
28 ounce can crushed tomatoes
2 cups chicken broth
1 can corn, drained
1 can black beans, drained
1 can chili beans, undrained
2 corn tortillas, finely chopped
1 tablespoon hot sauce (I used Tapatio)
Heat a stock pot over medium heat for a couple minutes – spray with avocado spray and add the turkey meat, chili powder and taco seasoning.
Break up the meat and cook about 5 minutes. Add the remaining ingredients and simmer for 20 minutes. That’s it!
The corn tortillas help thicken the soup, so if you leave it out, your soup will not be as thick as mine.

This soup is spicy, hearty and filling. I am having a problem with the internet on the train, so I am going to keep my fingers crossed that this posts.
