January 1st is a mere 27 days away! Now is the time that I have to work extra hard so I don’t eat my way through the holidays. How are you doing on the 2011 Holiday Challenge?
I have my meal plan in place, and have some good eats coming up – I am trying a thai curry butternut squash soup, Italian stuffed zucchini boats, salsa verde breakfast hash, except I am going to use sweet potatoes, caribean style pumpkin soup, just to name a few. š
Since I had my fitness evaluation yesterday morning, I only ate a banana on my way there so when I got home Tony made me breakfast. Um, he made hash out of frozen french fries that were out of this world, with buffalo sauce eggs. This was breakfast and lunch.
Hannah didn’t have to work until late afternoon so we were able to thrift shop and then go to . . .
We only had about a half hour – I could easily spend two hours in this place.
The place was pretty busy. I mostly was at the meat counter. I was trying to menu plan in my head based on the sale prices of meat. I ended up getting top round for beef stroganoff, marinated skirt steak and baby back ribs. I plan on putting the ribs in the crock pot – has anyone tried that before? Tony and I are going to be out and about today – he has his grand-nephews birthday party and I have twin fest with my twin sister and our best friends who are twins. š
I plan on finishing the ribs on the grill. Fingers crossed it works! š
I thought of Roz yesterday because they had blackberries for $1.25 a pint! I bought 4!
Dinner was super quick and easy – beef stroganoff – the only thing I was missing was the tomato paste, but it was still delicious.

We don’t have a Fresh Market here–is it sort of like Whole Foods, maybe?

Wow 27 days. Where did this year go? I’m still working on maintaining my weight during marathon training. I am hoping to maybe lose a few pounds as I taper down from the really long runs. I’m still trying to monitor portions and journal my food though I’m horribly inconsistent at this last one.
Those berries look so good. I can’t believe the price. Score!
Ribs in the crockpot are awesome, but I would be careful trying to finish them on the grill because they are going to be falling apart and difficult to transfer.
The only other way I make them is to dry rub them, bake them in the oven for a few hours and then finish them on the grill – they keep their integrity better.
And can we please get through Christmas before we start talking about 2012! heehee Wow that’s soon.

I love Fresh Market! The closest one is an hour away, but whenever I’m nearby I have to go in!

At the beginning of this week I got a little too comfortable with the past luck of weight loss and ate like crap. I gained 2 pounds, but knew I didn’t have time to go down that path so close to the wedding! I straightened my act up and ate healthy and got back to daily walks on the beach. I’m back down to the weight I was last week and have maintained it the past 3 days. I’ll be really happy if I can maintain this weight for the next 2 weeks up to the wedding!!!!
I’ve cooked ribs in the crockpot before, unfortunately both times mine turned out with the meat kind of rubbery. Juicy, but kind of a spongy texture. We are getting a Whole Foods soon, not as close as I had hoped, but can’t wait to check it out!! I have made ribs in the crock pot a few times and they turned out great.
