Double Chocolate Muffins

These double chocolate muffins are delicious and with a teaspoon of cinnamon, they taste double chocolatey!

Ingredients
  

  • 2 tbsp butter melted
  • 1/2 cup Truvia
  • 1 large egg
  • 1 tsp vanilla
  • 3 large bananas
  • 1/2 cup unsweetened almond milk
  • 1.5 cups self-rising flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 4 tbsp dark chocolate chips divided
  • 6 tsp coarse sugar divided

Instructions
 

  • Heat oven to 425
    In a large bowl, mix the melted butter, Splenda, egg, vanilla, bananas and almond milk together. I use a fork to mash the bananas.
    In a smaller bowl, add the flour, cocoa powder, baking soda, cinnamon, salt and chocolate chips. Toss until all the chocolate chips are coated in the flour mixture - this will help them not fall to the bottom of the muffin.
    Mix the flour and banana mixture together just until combined.
  • Divide between 12 muffin cups. Sprinkle 1/2 teaspoon of coarse sugar over the top. Bake for 15-17 minutes, or until a toothpick comes out clean and the muffins pull away from the tin. I baked mine for 15 minutes.
