Weekly Meal Plan for Monday 4.3.23 is here! Spring into a fresh week of meal ideas, and be sure to let us know in the comments if there are specific things you’d like to see on these meal plans. There is no better time than a fresh month to get organized and prepare meals for yourself!

This week’s meal plan includes the following delicious, nutritious recipes:

Choose from any recipes to try this week!

Low Point Banana Muffins with Crackle Topping – fresh, light, sweet and the crispy topping really takes these up a few notches! I would recommend pairing these with a cheese stick and some fruit.

Breakfast Taquitos – simple, versatile, and great way to use up any lingering veggies.

Broccoli Cheese Soup – I actually made a mini bread bowl to serve mine in, but this would be perfect when paired with a sandwich of your choice!

Chicken Quinoa Salad – a hearty lunch salad to keep you going, and seriously delicious. Feel free to add or lower any ingredients to your liking to adjust the points, but I think it’s worth every point as-is! I also excluded the delicata squash, since it’s not available year-round, and I promise it’s just as delicious! the honeycrisp apple dressing is fantastic, too. This is the honeycrisp dressing I used!

Chicken Sausage Meatballs with Pasta – fun fact, this was actually the first meal I made living alone. It’s comfort food vibes with great WW point value!

Nashville Hot Shrimp & Grits – spicy, creamy and filling.

Roasted Chicken – I suggest a side of green beans and potatoes (I put potatoes under my roasted chicken).

Zucchini Lasagna with Pork Ragu – if you need coziness in a dish, this is it!

There are recipe cards within the links above that contain the WW link to check on the point values. Feel free to use these meal plans as a guide or for inspiration rather than making everything listed all week.

Cheers to a new month and hopefully better weather as we jump into Spring!  Let us know if you are enjoying this weekly meal plan for Monday 4.3.23.  We appreciate it!
