I didn’t wake up . . .

until 10:30 this morning!  God I love sleeping in!  We are headed back up to Lake Geneva early this afternoon to meet up with my MIL’s family at the tale end of their reunion.  They have had a wonderful week! :D

Breakfast was zucchini bread.  But an egg zucchini bread!  1/2 cup egg beaters mixed with 1/2 cup shredded zucchini put on toasted rye bread and topped off with cheddar cheese.  Don’t you love the classy baby shower paper plate? :D

And then a McDonald’s mini parfait – I really like these!

Even though my work day was busy, I was able to get to the gym.  I did a 7.3 mile race that I had completed before.  Not only did I beat the pacer bike by 5 seconds, I beat my previous time by three minutes!

Here is my sad attempt at taking my sweaty face:

Lunch was from my freezer – my roasted yellow pepper soup and a corned beef and swiss cheese sammie.

Dinner was inspired from Food Network’s June magazine:

My local grocery store does not carry double cut bone in pork chops, so I used boneless chops.  Since their recipe was for 4 pounds of pork, I adapted their glaze recipe – I left out the onions, maple syrup and prunes.  I wasn’t sure how that would turn out, but I love how it turned out.  When you taste it on stove after its cooked down, it does taste a bit too much on the vinegary side, but once on the grill, it caramelizes and was so good.

Apple Glaze For Pork

Ingredients

2 tablespoons butter
1/2 cup apple cider vinegar
1/3 cup brown sugar
1/2 cup ketchup
3/4 cup apple juice
1/4 cup bourbon
1/4 cup Worcestershire sauce
1/4 teaspoon cayenne pepper
1 pinch salt
1 pinch pepper

Directions

Put all ingredients in a sauce pan and mix with whisk. Bring to a boil, then simmer for 30 minutes until reduced and thick.

You’ll notice I haven’t put the calories for anything.  I am trying to not micromanage so much and decided not to put everything I eat into calorie count.  Instead I am going by my blood sugar numbers.  Look at my 30 day average!

I test my blood sugar about six times a day.  I had a doctor appointment on Wednesday, and when my doctor was scrolling through my meter, he said “I wish all my patients had numbers like these!”   I took my quarterly blood test so in a week I’ll know the rest of my numbers.

BSI is going International!  While we have had Marianne from Canada host before, we now go to India!  Hema chose . . . Onions!  Since it’s so late in the week, this BSI contest will run until July 31.  I know Debbi will be happy with this ingredient! :D

    I’ll have to try one of those mini parfaits. I love McDonalds coffee but when I go through the drive-thru and I’m hungry I usually end getting something WAY too high in calories. The parfait isn’t bad at all!

    Great job on the numbers! Blood sugar can be such a pain to control. Especially in the summer with vacations and get togethers!

    It is a testament to my laziness that I have had my Aviva meter over a year, probably almost two, and I have yet to read the manual and find out how to do nifty things like look at my average blood sugar. Further proof is that instead of going to it now, I’m asking you….how do you do that? And do you know a way to trick your meter into using a strip that you didn’t put enough blood on and the “E” message comes up? With my Accu-chek active, all I had to do was pull out the “e” strip, pop in a new one, then take it out and put more blood on the “e” strip and put that one in to replace the new one. Since it’s programmed to take out the strip in case you need to apply it to your arm or other place you poked, it worked like a charm. Haven’t figured out how to do that with my Aviva–it just starts over when I reinsert the new strip. :(

      I’ve never been able to reuse a strip that didn’t have enough blood on it. On my meter, it has a button on the top to turn it on without a test strip in it. If I then use the arrow keys, I can see my 7, 14 and 30 day averages. Hope that helps!

      If not, do a you-tube search, I am sure you will find a video of it there.

    I don’t think I’ve ever slept that late in my entire life. 57 years. I wish I could! Your food looks great, and what a good job you do with blood sugar leveling. Have a great time at Lake Geneva this weekend. When I see that, I always think first of Switzerland! Now that would be some weekend travel!

    I like the McD’s parfait too. Sometimes for lunch if I’m not very hungry or after working out, I’ll get a parfait and a side salad w/ the low fat balsamic.

    Biz, you have NO idea! I think the same as your doc! Cross your fingers for me — I have a 2nd round interview next week at the children’s hospital in Columbus working in endocrinology — almost all type 1′s! I am PUMPED! Words cannot describe how badly I want this job! Kids and type 1 are a huge difference from adult type 2′s, but it’s an exciting prospect and I LOVE learning!

    haha, i tried to take a sweaty post workout photo but the lighting was off and all my pics were too dark, at least urs isnt too bad.

    ive always loved those parfaits! mcdonalds has some good food options even tho most isnt that great for people. but the parfaits and a few of the salads, and even the egg mcmuffin arent too bad!

    Interesting that you are not doing the calorie counts…I’m not, either, and I think I’m doing just fine. Will check in with the scale next week, but it sure is easier to go with hunger and not always calories.
