Taco Fiesta!

Can I just say that its weird not having pizza tonight??  But Hannah and I love having Mexican food anytime!  I remembered that I still had chicken in the fridge left over from our baked orange chicken and decided to cook that up for me and Hannah.  Tony got shrimp!  I did a quick 15 minute marinade – juice from 1/2 lime, fresh chopped cilantro and taco seasoning.

Then I just grilled his on our cast iron griddle – only took a couple minutes!

Then I just mixed up taco seasoning with our chicken – it had been marinating in the orange chicken marinade, but after I added the taco seasoning that all we tasted.

So my dinner:

  • 2 tostadas
  • 3 ounces chicken
  • 1/4 cup fat free refried beans (split between each tostada)
  • 2 tablespoons fat free sour cream
  • 1/2 ounce Mexican shredded cheese
  • Taco bell mild taco sauce
  • 1 ounce tortilla chips
  • 1/4 cup fresh guacamole
  • lime juice over tostadas
  • Tabasco!
Dinner comes in at 532 calories, 25 fat and 44 carbs

Don’t worry – I think we’ll have pizza tomorrow night!!   Off to relax with Tony – hope everyone has a good night and I’ll see you in the morning!
