No Fail Meatloaf

Tony is a huge fan of meatloaf.  Me, not so much!  Here is my no fail meatloaf recipe:

  • 1.5 pound meatloaf mix (if you don’t see it, ask the butcher for it.  It’s a combo of  ground beef, veal and pork)
  • 1 slice bread, torn up
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon fresh black pepper
  • 4 tablespoons ketchup (more needed for topping)
  • 1/2 cup heavy cream

Mix altogether.  I cook it on top of my cast iron skillet on a rack so that it gets crispy all the way around and drains some of the fat.  Here’s what it looks like out of the oven:

Hannah and I had our tacos – yum!  I had two corn tortilla tacos with 1 ounce of nachos.  Hit the spot!

    I’ve never heard of panettone. If it’s some kind of cake(like it looks) I’m sure I’ve love it!!
